Chicken Pot Pie VI

Reviewed: Sep. 29, 2005
This is really quite fantastic- a great way to impress dinner guests. I was concerned about the cheese, and almost omiitted it, but I left it in, and it was really great- not too cheesy- just creamy! I wasn't sure if the juices inside would pour over the edges during baking, so I put a cookie sheet underneath. I wouldn't do that again- because my bottom crust didn't get as crispy as I would have liked. Thanks so much for the recipe- it makes my husband very happy.

Slow-Cooked Oriental Chicken

Reviewed: Nov. 7, 2009
Quick, easy and delicious. I threw these together quickly and the chicken ended up really flavorful and delicious. I loved how I didn't have to marinate these first. I'll be doing these again.

Potato Leek Soup III

Reviewed: Nov. 8, 2009
This was so delicious. The only changes I made were to add 5 cloves of minced garlic to sautee with the leeks, cut the butter in half and add about 1.5 more cups of broth to the soup. I will make this again and again, and will use it as a base for all of my cream soups/chowder etc. Next time, I will try using just milk to see if I can cut some of the fat. If I do that, I am sure I'll need to add more cornstarch to thicken up.

Black Bean Hummus

Reviewed: Aug. 17, 2005
I stumbled on this recipe, and I am really glad that I did. We had just finished up a container of black bean hummus that we had purchased from Costco. My husband and I both loved it so much, and I have to tell you that this recipe tastes exactly like the hummus that we paid $5.00 a container for. I don't like Garbanzo beans at all, but love the overall flavor of hummus, so this was a really great find. Next time, I will add more garlic, and reduce the liquid- it was a little too thin, and I only added 2 tbsp. of the reserved liquid. I'd say that it is definately ok to discard the remaining liquid, save 1 tbsp. Thank you so much Jen for saving us some money with this recipe!!!

Caramelized Baked Chicken

Reviewed: Nov. 8, 2009
I was glad to find this recipe that I didn't need to marinate first. I did have to warm up the sauce in the microwave a bit so that it blended well before I poured it over the chicken. The chicken turned out great, and I'll be making again.

Michelle's Peanut Butter Marbled Brownies

Reviewed: Aug. 12, 2007
These were fantastic. I used boxed brownie mix for the brownie portion (short on time) - and they were fabulous. I did them in a 9 X 11 pan - with a doubled recipe. I added about a 1/2 cup more peanut butter for a stronger peanut butter taste. They were a hit at my company picnic!

Awesome Honey Pecan Pork Chops

Reviewed: Aug. 6, 2005
These are really quick, delicious and easy. I think though, that once you are finished browning the pork, more butter should be added before adding the honey. I really liked it that way. I have been cooking for my cousin and her family (she recently had twins), and they have requested it more than once.

Chicken Makhani (Indian Butter Chicken)

Reviewed: Aug. 6, 2005
I LOVE this recipe. That said, I have to make some adjustments to suit my taste. I put much more garam masala than called for (but I used Spice Islands brand, which is probably more mild than an authentic Indian brand). I used sour cream because I didn't have any yogurt. I also used evaporated milk instead of half and half. I used 1 1/2 cans of tomato sauce as well. I didn't need to thicken since I used evaporated milk. So great with basmati rice and naan. This is probably way Americanized- but different than a lot of other recipes and so good.

Brown Sugar Smokies

Reviewed: Aug. 6, 2005
These are the most simple looking appetizer, but boy, do they go fast! Make sure you do a lot of these for your party- because they were the first things gone out of an entire spread of appetizers. Surprising, but very good. It is worth the effort that goes into making them. Make sure to use a broiler pan lined with foil- it makes clean up much easier.

Artichoke Bruschetta

My new favorite appetizer!! I would say to definately double the recipe if you want to feed more than 5 people. I like to heap the topping on my bread. This was so very very good.

Grecian Chicken

Reviewed: Jul. 6, 2005
This is absolutely wonderful! I have made it quite a few times now, and I have only changed a couple of things. I don't think the flour is necessary. I have also added artichoke hearts, because a greek dish like this without artichoke hearts doesn't make sense. I serve this with pasta tossed with olive oil and (more) greek seasoning. It is really delicious.

Riblets and Sauce

Reviewed: Jun. 27, 2005
These riblets are outstanding. My husband said that he'd never have riblets at (a famous chain restaurant famous for their riblets) again!! The meat falls right off of the bone, and the flavor is amazing. I added about a tablespoon of minced ginger root to the marinade to kick up the asian flavor of the ribs. Also, no extra salt is necessary- the soy sauce is salty enough. I have made them twice now, both times in the oven in a roasting pan. Definately double the sauce if you cook them in the oven, and turn the riblets a couple of times throughout cooking- there won't be any sauce leftover- it will all have soaked into the meat. They make great leftovers too!! These are a must try!

Golden Sweet Cornbread

Reviewed: Jun. 27, 2005
This was a really great recipe. I have never been a fan of cornbread, but we had family over for Riblets and mashed potatoes last night, and I thought that cornbread fit the bill. I did everything that the recipe instructed, except I added 1 cup of frozen corn (thawed and drained) to the batter, and it was wonderful!! I will be making this often- I think that I LOVE cornbread now!

Banana Cream Pie Made Easy

Reviewed: May 9, 2005
I made this pie for my mother in law for mother's day- and "Wow!". I couldn't believe how easy this was to make- and how delicious. The pudding layer alone was wonderful- I could eat that by the spoonful. I took leftovers to work- and it was gone in less than 5 minutes.

Banana Cake VI

Reviewed: May 9, 2005
If I could give this cake more stars, then I would. It is absolutely wonderful! The frosting alone is enough for 5 stars. I could eat this cake every day. I think that the chopped walnuts on top add so much to this recipe- and I usually shy away from adding nuts to my baked goods. You will love this cake!!

Best Brownies

Reviewed: May 9, 2005
This will be my standby brownie recipe from now on- tastes very close to the Giradelli brownies out of the box (some of the best you can get) I am not sure what I think of the frosting though. I'd just assume not put any frosting on them- they are perfect as is!

Fantastic Black Bean Chili

Reviewed: May 9, 2005
This recipe is really fantastic. I used ground chicken because it is moister than ground turkey. I added diced jalepenos for a little more heat- and i threw in some corn for color. My husband absolutely loved this. We both don't like regular chili very much (I don't like kidney beans, he doesn't like beef)- but we both decided this would be a regular item in our household. It is healthy and delicious!
