Baklava

Wow. This recipe is definately a keeper. I am very impressed. I never thought that I could make Baklava, but this recipe proved me wrong. I used melted butter and applied to the sheets with a pastry brush- I used about 1.5 cups of butter. I like the idea of pulverizing the nuts in a food processor first- I may do that next time. The honey sauce is fabulous. I used salted butter, and it was perfect- it gave it a lot of extra flavor. Mmmmm.... Baklava. Mmmmmm...

Lemon Dreams

Aunt Teen's Creamy Chocolate Fudge

I tried this recipe a few years ago with really poor results, and decided to give it another shot due to all the really great reviews it keeps getting. This time, it was fabulous, so I suppose my last problem was user error! Delicious fudge and really easy to make.

Asian Coconut Rice

Molasses Crinkles

These were fabulous cookies, and this recipe should be in everyone's recipe box. They are so chewy. I used butter instead of shortning. They spread out just fine, and have the perfect spice that a molasses cookie should have. Thank you so much for this great addition to my Christmas cookie trays!

White Chocolate Raspberry Cheesecake

This is such a great recipe. I have made a few cheesecakes, and this one by far turned out the best. I used Nilla Wafers instead of chocolate cookies because I am not a fan of chocolate/fruit mixes. Without really realizing it, I put more of the raspberry sauce in the cheesecake then the recipe called for because I didn't see that you were supposed to serve the cheesecake with the leftover sauce. It was great- I'll do the same thing the next time I make the cheesecake. I served the cheesecake with a white chocolate sauce that I made- and it was great. Now, if I can only figure out how to take the cheesecake off of the bottom of the springform pan without messing up the cake for serving.

Beth's Spicy Oatmeal Raisin Cookies

These are some of the best oatmeal cookies I have ever had and I am so excited that I can make them whenever I want with this recipe! I did use all butter with this recipe (I didn't have any shortning), and they were delicious. I don't know if I'd even use shortning next time. I soaked the raisins in boiling water for about 20 minutes before adding them to the batter- which makes the raisins very plump and tender. I took these cookies into a sales meeting along with Beth's snickerdoodles and the big fat chewy chocolate chip cookies (my favorite) and the oatmeal cookies went first! Thank you so much for this great recipe.

Baked BBQ Fried Chicken

This was so delicious. My husband is a big fan of KFC's bbq chicken and this is a close second. We used Jack Daniel's BBQ sauce, and it was fabulous!!

Artichoke Bruschetta

Chicken Pot Pie VI

This is really quite fantastic- a great way to impress dinner guests. I was concerned about the cheese, and almost omiitted it, but I left it in, and it was really great- not too cheesy- just creamy! I wasn't sure if the juices inside would pour over the edges during baking, so I put a cookie sheet underneath. I wouldn't do that again- because my bottom crust didn't get as crispy as I would have liked. Thanks so much for the recipe- it makes my husband very happy.

Slow-Cooked Oriental Chicken

Quick, easy and delicious. I threw these together quickly and the chicken ended up really flavorful and delicious. I loved how I didn't have to marinate these first. I'll be doing these again.

Potato Leek Soup III

This was so delicious. The only changes I made were to add 5 cloves of minced garlic to sautee with the leeks, cut the butter in half and add about 1.5 more cups of broth to the soup. I will make this again and again, and will use it as a base for all of my cream soups/chowder etc. Next time, I will try using just milk to see if I can cut some of the fat. If I do that, I am sure I'll need to add more cornstarch to thicken up.

Black Bean Hummus

I stumbled on this recipe, and I am really glad that I did. We had just finished up a container of black bean hummus that we had purchased from Costco. My husband and I both loved it so much, and I have to tell you that this recipe tastes exactly like the hummus that we paid $5.00 a container for. I don't like Garbanzo beans at all, but love the overall flavor of hummus, so this was a really great find. Next time, I will add more garlic, and reduce the liquid- it was a little too thin, and I only added 2 tbsp. of the reserved liquid. I'd say that it is definately ok to discard the remaining liquid, save 1 tbsp. Thank you so much Jen for saving us some money with this recipe!!!

Caramelized Baked Chicken

I was glad to find this recipe that I didn't need to marinate first. I did have to warm up the sauce in the microwave a bit so that it blended well before I poured it over the chicken. The chicken turned out great, and I'll be making again.

Awesome Honey Pecan Pork Chops

These are really quick, delicious and easy. I think though, that once you are finished browning the pork, more butter should be added before adding the honey. I really liked it that way. I have been cooking for my cousin and her family (she recently had twins), and they have requested it more than once.

Chicken Makhani (Indian Butter Chicken)

I LOVE this recipe. That said, I have to make some adjustments to suit my taste. I put much more garam masala than called for (but I used Spice Islands brand, which is probably more mild than an authentic Indian brand). I used sour cream because I didn't have any yogurt. I also used evaporated milk instead of half and half. I used 1 1/2 cans of tomato sauce as well. I didn't need to thicken since I used evaporated milk. So great with basmati rice and naan. This is probably way Americanized- but different than a lot of other recipes and so good.

Brown Sugar Smokies

These are the most simple looking appetizer, but boy, do they go fast! Make sure you do a lot of these for your party- because they were the first things gone out of an entire spread of appetizers. Surprising, but very good. It is worth the effort that goes into making them. Make sure to use a broiler pan lined with foil- it makes clean up much easier.

Thai Curry Soup

This was fantastic. I doubled all of the ingredients in this recipe to make some leftovers - but I think that it still should have had more shrimp and noodles per serving. So, I'll probably tweak the proportions a bit next time. Other than that - it was yummy! Oh, and I didn't have lemongrass or lime juice - so I added lemon zest and lemon juice. I know that they're completely different, but still added a great flavor to the dish.
