Cocktail Meatballs

Reviewed: Dec. 19, 2005
I must say that I was skeptical about this recipe because of the cranberry sauce, but you know, it was really good! I made them for a holiday party, and everyone said they were great. I have had some better tasting ones in the past, so I am still on the hunt to find a FABULOUS meatball recipe. Thanks a lot. I will use this one again.

Japanese Chicken Wings

Reviewed: Dec. 19, 2005
These are outstanding! I don't like frying food, but this wasn't so bad- I may try it with oil and not butter next time though since butter has a tendency to burn on med-high heat. Regardless, the end result was wonderful. I did marinade the cooked wings in the sauce for about 45 minutes before I transfered them to the oven. Also, I used real garlic (minced) and added green onions, which topped it off perfectly. Thank you so much for this recipe. My tastebuds thank you.

Baklava

Reviewed: Dec. 19, 2005
Wow. This recipe is definately a keeper. I am very impressed. I never thought that I could make Baklava, but this recipe proved me wrong. I used melted butter and applied to the sheets with a pastry brush- I used about 1.5 cups of butter. I like the idea of pulverizing the nuts in a food processor first- I may do that next time. The honey sauce is fabulous. I used salted butter, and it was perfect- it gave it a lot of extra flavor. Mmmmm.... Baklava. Mmmmmm...

Candy Cane Fudge

Reviewed: Dec. 19, 2005
This is really great candy. I don't know if I could classify it as fudge- because it is the texture of a chocolate bar. The flavor is great. I only used 1 cup of crushed candy canes. I added about 2 tsp. of peppermint extract though so that you could actually taste the mint. I colored it red- and thought it to be a bit of an eyesore. I didn't have any extra candy canes to crush and sprinkle on, but that would've made it look great. Instead, I had some green mint chips. I melted them in the microwave, and spread them over the fudge. It was green and red layered- it really added a lot to the presentation. I will try this with milk chocolate too. Thanks.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Dec. 19, 2005
I tried this recipe a few years ago with really poor results, and decided to give it another shot due to all the really great reviews it keeps getting. This time, it was fabulous, so I suppose my last problem was user error! Delicious fudge and really easy to make.

Gooey Cherry Bars

Reviewed: Dec. 19, 2005
These are really great, and look wonderful on a Christmas Cookie tray. I would definately suggest to double the frosting, and add at least 2 more tablespoons of butter to make it more creamy. I think I am going to try these with almonds next time for variation. I sprinkled red sprinkles on top- and they looked very festive.

Molasses Crinkles

Reviewed: Dec. 1, 2005
These were fabulous cookies, and this recipe should be in everyone's recipe box. They are so chewy. I used butter instead of shortning. They spread out just fine, and have the perfect spice that a molasses cookie should have. Thank you so much for this great addition to my Christmas cookie trays!

White Chocolate Raspberry Cheesecake

Reviewed: Nov. 14, 2005
This is such a great recipe. I have made a few cheesecakes, and this one by far turned out the best. I used Nilla Wafers instead of chocolate cookies because I am not a fan of chocolate/fruit mixes. Without really realizing it, I put more of the raspberry sauce in the cheesecake then the recipe called for because I didn't see that you were supposed to serve the cheesecake with the leftover sauce. It was great- I'll do the same thing the next time I make the cheesecake. I served the cheesecake with a white chocolate sauce that I made- and it was great. Now, if I can only figure out how to take the cheesecake off of the bottom of the springform pan without messing up the cake for serving.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 9, 2005
These are some of the best oatmeal cookies I have ever had and I am so excited that I can make them whenever I want with this recipe! I did use all butter with this recipe (I didn't have any shortning), and they were delicious. I don't know if I'd even use shortning next time. I soaked the raisins in boiling water for about 20 minutes before adding them to the batter- which makes the raisins very plump and tender. I took these cookies into a sales meeting along with Beth's snickerdoodles and the big fat chewy chocolate chip cookies (my favorite) and the oatmeal cookies went first! Thank you so much for this great recipe.

Waffles I

Reviewed: Oct. 28, 2005
These were really fantastic waffles. My husband (strangely) doesn't usually like homemade waffles, and prefers the mix, but these are great, and will be my new standby recipe! Thanks!

Italian Baked Cannelloni

Reviewed: Oct. 14, 2005
This is a great Lasagna recipe. It really was nothing like traditional Cannelloni. The flavor was very good, but cannelloni is supposed to be a meat filling with spinach and egg to hold it all together. This was a mozzerella cheese filling with some meat in it. I did add spinach and garlic to the filling. The filling was really too runny to stuff shells with, so I had to kind of lay the noodles open and pour the sauce in. Perhaps if there was less liquid in the Bechamel sauce, I wouldn't have run into this. I am indecisive on whether I would try it again.

Chocolate Cobbler

Reviewed: Oct. 10, 2005
I think this is a good base, but i think that the chocolate flavor is really weak in the cake portion. I noticed that when I tested the batter, but I am a firm believer in always doing a recipe the way its written the first time, so I proceeded without adding more chocolate. I will definately double or triple the chocolate the next time. I found that there was a lot of extra sauce as the other reviewers noted, so I will cut the water down a bit the next time as well. Regardless, it was gone at the church potluck- people liked the way it looked and had at it! Thanks for the great idea!

Jet Swirl Pizza Appetizers

Reviewed: Sep. 30, 2005
These were very good. I substituted canadian bacon for the pepperoni, because that is all that I had. I think that next time, I wouldn't bother with the mozzerella- and I would just use the provolone. I think there was too much cheese (and I LOVE cheese). I served them with a side of marinara sauce. People at the baby shower that I served them at kept calling them ham sandwiches though. Oh well- they were good.

Artichoke Bruschetta

Reviewed: Sep. 29, 2005
My new favorite appetizer!! I would say to definately double the recipe if you want to feed more than 5 people. I like to heap the topping on my bread. This was so very very good.

Chicken Pot Pie VI

Reviewed: Sep. 29, 2005
This is really quite fantastic- a great way to impress dinner guests. I was concerned about the cheese, and almost omiitted it, but I left it in, and it was really great- not too cheesy- just creamy! I wasn't sure if the juices inside would pour over the edges during baking, so I put a cookie sheet underneath. I wouldn't do that again- because my bottom crust didn't get as crispy as I would have liked. Thanks so much for the recipe- it makes my husband very happy.

Cha Cha's White Chicken Chili

Reviewed: Sep. 29, 2005
Flavor is fantastic. Texture- not so great. I was hoping for more of a thicker stewy chili- but this was soup with chicken and beans. I am not sure how I would thicken it up- maybe it needs to cook longer, or it needs more beans. I will keep working on it.

Indian Chapati Bread

Reviewed: Sep. 29, 2005
Yes, this recipe was very simple. It was also quite bland. I guess that I was looking for something more like naan. I think that a little sugar would have done wonders. I don't think I will try this recipe again. thank you though.

Black Bean Hummus

Reviewed: Aug. 17, 2005
I stumbled on this recipe, and I am really glad that I did. We had just finished up a container of black bean hummus that we had purchased from Costco. My husband and I both loved it so much, and I have to tell you that this recipe tastes exactly like the hummus that we paid $5.00 a container for. I don't like Garbanzo beans at all, but love the overall flavor of hummus, so this was a really great find. Next time, I will add more garlic, and reduce the liquid- it was a little too thin, and I only added 2 tbsp. of the reserved liquid. I'd say that it is definately ok to discard the remaining liquid, save 1 tbsp. Thank you so much Jen for saving us some money with this recipe!!!

Pizza Dough III

Reviewed: Aug. 7, 2005
This dough was ok. It was the first time that I had made homeade pizza. The pizza turned out pretty good, but I wasn't sure about this dough. It was really dense. We made breadsticks out of the dough too- but it wasn't as light as I was looking for. I used to work at a wonderful family owned pizza place- and I got spoiled by their amazing crust. I will keep looking for the perfect crust recipe, but until then- this recipe will do. Thank you.

Pretty good for a change- I wouldn't eat this cold though. I liked the fresh tomatoes in the pasta- it added a lot.
