Easy Peach Crisp I

Reviewed: Feb. 26, 2007
The way this recipe is written will not produce a tasty result, as you can see from the other reviewers. I made this recipe as written, and didn't cook long enough (30 minutes). Therefore, there was still a lot of cake mix powder over the "crisp", and it was mushy and undercooked. I was embarrased to serve to guests, and down the disposal it went. Perhaps I'll try again, modifying to the other reviewers suggestions.

Tortellini Soup I

Reviewed: Jan. 25, 2007
This soup is so great! I haven't made it this winter yet, but I'll be making it for company tomorrow night, and I'm really excited! Everything is so essential in this receipe-and I love the flavor that the red wine gives. Yum!

Peppermint Pie

Reviewed: Dec. 26, 2006
I am not sure what I did wrong, but this pie was so very sweet, and didn't set up. It was the texture of pudding and could have been served in bowls. It looked great, but no one at our Christmas dinner finished it - and the rest ended up in the garbage. I love the idea, but don't think I'll be using this recipe again.

Cherry Pound Cake

Reviewed: Dec. 26, 2006
This recipe will be a 5 the next time I make it because I will do a few things differently. I liked the other reviewer's idea about sprinkling some of the cherries on the bottom of the pan before pouring the batter in. Definately use more cherries. I used a jar and a half of cherries, but I will use 2 jars next time (or more!). The cook time was also way too long. I'll bring it down to 60 mins next time so that it is more moist. The flavor of this cake is excellent. I also reccomend making a glaze of milk & powdered sugar (with some cherry flavored extract) to put on top.

Fabulous Fruit Salad

Reviewed: Dec. 26, 2006
This was good, but nothing exciting. I did leave out the celery because of other reviews. I also couldn't find nectarines, so I left those out. Maybe nectarines would have made it more exciting. I doubled the recipe because I was feeding 10 people, and there were a lot of leftovers.

This was really great. I made this for a pre-Christmas breakfast, and everyone gobbled it down. Thanks for the great recipe!

Peppermint Pinwheels

Reviewed: Dec. 22, 2006
These tasted good. They were a crunchy cookie, and I would have preferred a softer cookie. The dough was hard to work with because it was really dry, so I wonder if adding butter would solve both of my issues. I also added more peppermint to the red dough because it needed to taste more minty. They were festive looking though on my Christmas Cookie display. I'll try this again, with some modifications.

Beth's Chocolate Chip Cookies

Reviewed: Dec. 3, 2006
I want to start by saying that everyone is particular about how they like their chocolate chip cookies. Personally, I didn't like these at all, but that doesn't mean that they won't suit another's taste (obviously, because of all the great reviews). The batter was very thick and crumbly- I had to press the cookie together, and the chocolate chips kept falling out of the batter. After my first batch, it was obvious that this recipe makes very cake-y cookies. In my next batch, I tried to flatten out the cookie before I put it in the oven (these don't spread as they bake), which seemed to work better as far as appearance is concerned. As they cooled, it became apparent that these cookies are also for the crunchy cookie lover. I like my cookies chewy and soft. With all that said, the flavor was good- it was just the texture I didn't like. I'll stick with the "Best Big, Fat, Chewy Chocolate Chip Cookie" recipe on this site.

Elizabeth's Extreme Chocolate Lover's Cake

Reviewed: Dec. 3, 2006
This cake is outstanding. It is fun to make, and tastes like heaven. It is a very gourmet dessert, but worth the extra effort. I gave this recipe to a friend of mine a couple of years ago, and since then, people have actually paid her to make this cake for them. It's great to find such an amazing recipe - and even better to share!

Strawberry Torte

Reviewed: Dec. 3, 2006
I made this for my company Christmas party this year, and it was finished off completely! I followed some other's advice and cooked down a bag of frozen strawberries with 3/4 cup of sugar and 2 tbs. cornstarch (making sure to mix the cornstarch with some of the strawberry juice first). Then I pureed the mixture in a blender and let it cool. I did cut down some of the ladyfingers because they were too tall when I was assembling the sides. After I put the cake together, I poured the cooled strawberry mixture on top of the entire cake. I chilled the cake for 24 hours, and then used the leftover cream mixture to pipe rosettes around the top border and in the very center of the cake, and used fresh strawberries to border the bottom of the cake (and one on the top for good measure). I will definately make this again, and next time, I'd like to put sliced fresh strawberries in the cream filling too. Thanks so much for such an elegant recipe!

Sweet Potato Casserole II

Reviewed: Nov. 29, 2006
This was really good. I am giving it 4 stars, and not 5 since I had to cut the sugar in the potato mixture to 1/3 cup. That was plenty sweet! Keep the topping just like it is though- perfect. I did, however, miss the marshmallows on top this year- so I'll have to bring those back next year. Thanks for a great recipe!

Slow Cooker Stuffing

Reviewed: Nov. 19, 2006
I made this last year for Thanksgiving dinner, and I'm not sure what I did wrong, but it was super soggy. The texture turned everyone off, and we had a lot of leftovers that we had to throw away. I was disappointed because normally, stuffing is my favorite part of Thanksgiving dinner. Maybe if you added less chicken broth?

Good Old Fashioned Pancakes

Reviewed: Jun. 15, 2006
These are fabulous pancakes- exactly what I was looking for. My husband isn't a huge fan of pancakes, but really liked these. They are very fluffy and have a great flavor- almost as good as my favorite pancake house's pancakes. Thanks!

Best Carrot Cake Ever

Reviewed: Apr. 21, 2006
This is such a great cake!! I am not a big fan of carrot cake in the first place, but I figured for Easter, I'd make one. I did a 2 layer 9 inch cake, and used the leftover batter for cupcakes. I also frosted and filled it with cream cheese frosting. I was amazed at how good it was, and received rave reviews from family. I took the cupcakes to work, and they were gone in no time. The only thing I may do differently next time is back down on the carrots by 1 cup or so. Otherwise, fabulous!!

Feta Cheese Foldovers

These are so good. I received many compliments on them from Feta lovers. I used the garlic and herb feta- and I wouldn't use anything else.

Hot Bruschetta Dip

Reviewed: Feb. 20, 2006
Fabulous. I served this using just a wedge of brie (double cream brie, not triple cream). I loved the simplicity of doing it in the microwave, and my guests loved it. Made sure to add lots of garlic and basil! Perhaps a little less onion then suggested also.

Prosciutto Wrapped Asparagus

Reviewed: Feb. 20, 2006
I loved this recipe. What an elegant and different side dish or appetizer. The only thing I wasn't keen on was the saltiness of the prosciutto- but that is no fault of the recipe.

Frozen Tiramisu

Reviewed: Feb. 20, 2006
This was pretty good. I made this for some friends that we had over for dinner. It was very simple to prepare. I am not sure about how necessary the sauce is though. I just used a gallon of coffee flavored ice cream- and it worked great!

Feta Cheese Foldovers

Reviewed: Dec. 19, 2005
These were very good. I made them for our company Christmas party, and received many compliments. I didn't brush any egg over the tops- it saved time, and wasn't necessary. It is very necessary though, to use flavored feta like the garlic and herb feta by Athenos. It adds a lot. I think they may be bland without it.
