Extreme Banana Nut Bread 'EBNB'

This bread is really good. I'm only giving it 4 stars though, because it turned out pretty dark when it cooked. I cooked 1 loaf in a dark pan and 1 loaf in a clear glass pan and both were equally dark. Perhaps if I lower the oven temp another 25 degrees? Other than that though, this bread is fabulously moist and wonderful. Don't over-beat your batter, and the bread will rise while cooking (I accidently beat mine too long, so the loaves didn't rise at all).

Beef Stroganoff II

This was really good and easy. The only reason I gave it 4 stars was that it was slightly bland, and the recipe didn't call for mushrooms, which is essential to a stroganoff (you can't count the "mushrooms" in the cream of mushroom soup). :)So, I sauteed the onions first, and then I added the meat (which in my case, was chicken instead of beef) - then the mushrooms. Once that was cooked, I added the rest of the ingredients. I also added about 3/4 cup of milk with the soup - otherwise it would have been too thick. I also added granulated garlic and worchestershire for added flavor. This made it really yummy!! I will continue to use this as my base recipe for stroganoff.

Absolute Mexican Cornbread

So delicious! I halved the recipe since there were only 3 of us. I used frozen corn (thawed) with 2 tbsp sour cream. I also cut the sugar slightly. I used 1/2 can of chiles for a half batch, but will definately add more chiles next time. there is probably more than enough butter in this recipe- but that's what makes it so fantastic!!

Garlic Parmesan Orzo

This was so easy, and delicious! I will be making this often.... if I can figure out how to reduce the calorie content and still make it this delicious! (Oh, and I also added some extra garlic and shredded parmesan).

Shrimp Lemon Pepper Linguini

This was a great base recipe, but I felt like it needed more sauce and more lemon flavor. I think next time, I'll use 1 cup of chicken broth and 1/2 cup of wine, and maybe the juice of 2 lemons. I like the idea of adding some heavy cream, so maybe I'll just do that instead. I love lemon pepper and shrimp, so I'll definately be playing with this recipe some more. I'll check in later when I decide what works best. :0)

My Amish Friend's Caramel Corn

This caramel corn was pretty good. I added mixed nuts (almonds/cashews/peanuts) because I'm not a fan of just peanuts alone. Next time, I think I'll make more caramel to put over the top, because I didn't feel like the corn was coated enough. I made 6 quarts of popcorn, but it still wasn't coated to my liking, although still very good. I enjoyed eating the caramel off of the spoon... yummy!

Pumpkin Cream Cheese Muffins

These were good, but they weren't "pumpkin-y" enough. I'd add more pumpkin and spice to liven it up a little. Next time, I'll also swirl in the cream cheese filling. Great recipe though.

Basic Flaky Pie Crust

I used this crust with Grandma Ople's apple pie recipe on this site, and it was so delicious. I had to triple the recipe for a bottom crust and a lattice top. I'll never use another crust recipe again. This is it!

Praline Sweet Potatoes

This base recipe is so good- but I put marshmallows on top of mine instead of the pralines. I've done it both ways, and the year I did it without marshmallows and used pralines, I missed the marshmallows. Both ways are good though.

Bread and Celery Stuffing

My hubby likes a simple stuffing (while I like stuffing with italian sausage). This is the winner in our household for the holidays. To save time and $$, I just buy the dried bread cubes already made for stuffing. Works great.

Coconut Brittle

This is so easy and delicious! I toasted my coconut beforehand to add to the flavor. I also used sliced almonds, but they cook faster than macadamias, so I burnt my first batch. I watched it much more carefully on the second batch to make sure they didn't burn. Yum!

Caramel Shortbread Squares

These taste so good! I'll be making them over and over! Just like a twix bar! Don't cut them just out of the fridge though - they'll break up, and the chocolate will separate from the rest of the cookie. Next time, I'll cut them at room temperature.

Easy Mini Quiches

These are so yummy and easy! I had vegetarians in my group, so I used onion, spinach and artichokes in my "quiches", and it turned out great. They have great presentation as well. I'll definatly be making these again, and trying out different fillings.

Perfect Turkey

This is a perfect turkey! I didn't have a container large enough for brining, so I emptied out a produce drawer in my fridge (I have large produce drawers) and lined it with a garbage bag. It worked perfectly for brining. We cooked it breast side up the entire time. I had images of dropping a turkey on the floor while trying to turn it mid-way, and didn't want to deal with that. All of my Thanksgiving guests said it was the best turkey ever. I'll never use another recipe again!

Yummy Artichoke Dip

Yup! This is my NEW artichoke dip recipe. I've been using the same one for years- which was good, but this is GREAT. I love the green chiles, and will probably substitute some jalepenos at another time for a spicier dip. Loved the texture, and got a ton of rave reviews at a bridal shower.
