Little Meat Loaves

Until now, my husband despised meatloaf. With this recipe, I have converted him to a meatloaf lover. I made it for dinner, and he had it for breakfast and lunch the next day. I substituted breadcrumbs for the crackers, reduced the amount of sausage and brown sugar as other reviewers suggested, and doubled the amount of sauce I made. I put 1/2 the sauce on top of the recipe and simmered the rest to use as a dipping sauce. I also left off topping it with Parmesan. This recipe goes into the "make often" recipe file.

White Chocolate and Cranberry Cookies

These cookies are every bit as delicious as everyone who reviewed them said. I'm not fond of white chocolate, and no one in my family cares for cranberries, but everyone *loves* these cookies. And they really do turn out picture perfect for gift giving. These cookies will become a permanent part of my Holiday baking tradition!

Simple Whole Roasted Chicken

What an interesting change of pace! My husband couldn't stop raving about the wonderful flavor of this chicken. Thanks to those who mentioned that it caused some smoke alarms to go off, I opened the kitchen window and turned on the ceiling fan, which kept the fumes at bay. In the future, I will line the roast pan or use a disposable one. I had to throw my pan away because I simply couldn't get the residue off of it. This will make an excellent Thanksgiving bird rub. Thanks Indriani for the delectable recipe! P.S. I served this chicken with the Honey Roasted Red Potatoes, submitted by Stephanie Moon. Nice accompaniment.

Slovak Stuffed Cabbage

What a huge disappointment. Too many ingredients and too much prep time to be worth the outcome. I'll go back to making stuffed cabbage the old-fashioned way my grandmother used to -- without a recipe.

Baked Ziti I

Awesome! I took the advice of others and assembled a smaller version into a mid-size plastic container that I froze. That made the remaining amount of ingredients perfect for a 9" x 13" baking pan. I also mixed a little of the sauce into the bottom layer of pasta and covered the dish as recommended. I removed the cover after 20 minutes to allow the Parmesan cheese an opportunity to get a little color. Other than that and adding about a teaspoon of minced garlic and a couple of tablespoons of pesto to the sauce mixture, I followed the recipe exactly, and it was delicious!

Brisket with BBQ Sauce

Quick Cassoulet

I thought this was really flavorful. I added a little beef broth and cornstarch to thicken it up a bit. I also let it simmer for about 1/2 hour because I don't think bay leaves have time to infuse their flavor in only 10 minutes. Very enjoyable.

Good Old Fashioned Pancakes

These pancakes were just okay. They were heavy, thick and, I think they could have used a little more sugar and milk. I didn't find them bitter, as other reviewers said. Perhaps they mistakenly used baking soda instead of baking powder; I don't know.

Meaty Spaghetti Sauce

This recipe was a hit with the family! I used ground turkey and turkey sausage instead of ground beef and sausage; Rotel tomatoes instead of diced; and jar garlic/basil tomato sauce instead of can tomato sauce. The Rotel tomatoes add a nice "bite" to the recipe.

Tonkatsu - Asian-Style Pork Chop

I added an extra 1/2 tsp garlic to the egg mixture and used cayenne pepper instead of black. I first dipped the chops in plain flour, then the egg mixture and just one dip into the panko crumbs. Very tasty.

Caribbean Grilled Crab Cakes

The crabcakes were yummy, but the mango salsa, as other mention, is what makes this dish. To make the crabcakes gluten free, I left out the breadcrumbs, reduced the mayo to 1/2 cup, and as other suggested, I added Old Bay. I also added a pat of butter in the pan with olive oil instead of vegetable oil. My husband couldn't stop raving about the dish. I think he'd eat the salsa plain. We're not fans of cilantro, so I substituted parsley. I'll definitely use the salsa recipe for other dishes, like pork chops. Yum!
