To Die For Blueberry Muffins

I'm gluten and dairy free, so I used a GF protein flour, water instead of milk (next time I'll used almond milk), and vegan butter for the crumb topping. They are delicious!

Chef John's Turkey Sloppy Joes

This is one of the best sloppy joe recipes I've tried. The only adjustments I made are used avocado oil instead of butter and added a little minced garlic. My husband and I both love it!

Chicken with Grape Tomatoes and Fried Basil

I really enjoyed this dish. I left out the wine, used bone-in chicken thighs, marinated them for about an hour, and cooked them in a pressure cooker. Very tasty. The fried basil is a brilliant touch.

Slow Cooker Texas Pulled Pork

My husband, who would eat BBQ for breakfast, lunch and dinner everyday said this was really good. Based on others' comments, I used marjarom instead of thyme because I think it works better with pork. I also used a couple teaspoons of pure Indian chili instead of a tablespoon of the McCormick's type chili, which is really a blend of spices and not pure chili.

French Apple Pie with Cream Cheese Topping

I made this for my brother's birthday because he wanted an apple pie, and I thought I'd try something different. He gave it a 3.5, so I rated it as 3 because he didn't think it was to die for, and it was very crumbly.

This was very good. Next time, I think I'll leave the water out as I needed to add cornstarch to thicken it up. Without the water, I think it would have been just right.

I paid attention to those who thought it was too sweet and reduced the amount of sugar I used. Mistake. With the tamarind paste and vinegar, the amount of sugar in the recipe is appropriate.

Smoked Salmon Spread

My husband smoked some salmon the other day in hopes that I'd find a good dip recipe. This is it! He can't stop eating it. My caveat to folks is to be sure to use *smoked* salmon (DIY and save a lot of money). I added a little more salmon than the recipe called for, and I didn't have fresh dill, so I used dried dill (1/2 the amount called for). Finally, I mixed everything in a food processor to get a nice consistency.

I substituted white wine for the clam juice because I didn't have any, and I used more sun dried tomatoes, because I love them. This is a yummy recipe! A definite keeper!!!

Dad's Steak Rub

My husband LOVED this rub. He said it was quite possibly the best tasting piece of meat he's ever put in his mouth. We used it on flank steak and marinated it for 24 hours. Yum! Be sure to use real maple syrup. And to kick it up a notch, instead of black pepper, use something a little spicier like habanero powder.

Oven Roasted Potatoes

First of all, IMHO, it doesn't make sense to give a recipe four and five stars and then explain how one has completely altered it. By leaving out the herbs in this recipe, it's no longer this recipe. That said, I tried the recipe as is and thought it was okay. I think the dill was a little overpowering, and it would have been better without it. I'll stick with oil, salt, pepper, garlic, rosemary and sage on my potatoes though.

Wonderful Short Ribs

I loved this recipe, especially because it is very versatile. I can't eat worcestershire (because of the soy), thyme or onions. So I subbed tamarind paste and vinegar for the worcestershire; basil for the thyme; and some chopped green pepper and fennel bulb (about the same amount total as a medium onion). Delicious!
