Broiled Tilapia Parmesan

The fish came out nice and tender but it's way too cheesy for my and my husband's taste. We prefer just a little lemon and pepper so you can taste the flavor of the fish. Probably won't make it again.

Rosemary Turkey Meatloaf

Good flavor but definitely a little on the mushy side. I cut the brown sugar in half because of everyone saying how sweet it was, and it was sweet, but I liked the sauce. The flavor went well with the rosemary and the meat. I think there was too much bread crumbs and milk, that if they were halved it might have been better. Probably not going to be a favorite, but I will try it again.

Linguine with Seafood and Sundried Tomatoes

Excellent. I used sea scallops instead (the bigger ones) and added a little white wine and lemon juice to the seafood. Served it over angel hair pasta and sprinkled with some parmesean cheese. My husband and I cleaned our plates. Thanks!

Baked Salmon II

I followed the recipe exactly and it seemed a little on the salty side to me. Next time I will cut down on the oil and salt. But my husband - who doesn't really care for salmon - cleaned his plate. Will definitely make again. Thanks!

Fresh Asparagus and Chicken Casserole

It was okay...I reduced the liquid and it was still watery, so I added a little flour mixed with water to thicken it up after cooking. Needed some salt and pepper also. I think next time I will add the flour while it's simmering and a little more seasonings. Will probably make again with modifications.

Penne with Spicy Vodka Tomato Cream Sauce

Very good. After reading the other reviews I used 1/2 cup vodka and 3/4 cup of cream. I actually used half and half, but I think cream would have been better. I also threw in some grated cheese while it was cooking. My husband loved it. Will definitely make again. Thanks!

Chicken Enchiladas I

This recipe took a little more work than I expected, but it was worth it. I used Sara's enchilada sauce (from this site) as recommended by other reviewers. I also reduced the tomato sauce, omitted the water and used a cheddar jack mix. I also omitted the green pepper and used canned green chili peppers instead. It was a bit hot for me and I will probably tone it down next time, but my husband loved it and I will definitely make it again. Thanks!

Excellent! I followed the advice of other reviewers and cut the broth to 3 cups and added a can of beans. I also added a splash or two of hot sauce. It was very good. I can't wait to have it for lunch tomorrow. Thanks, DeeDee!
