Chicken Breasts with Herb Basting Sauce

I used skinless, boneless breasts and they came out very moist with pretty good flavor. I think the herbs are a little overpowering though. But overall, not a bad dish. Will probably make again.

Grilled Potatoes and Onion

Fruity Grilled Pork Tenderloin

I used this marinade for pork chops - since it is only my husband and me - and it came out fabulous! I was a little skeptical about the ingredients, but I followed the recipe exactly and it was wonderful. I found the plum jam in the ethnic section of my food store - imported from Poland of all places. Will definitely make again. Thanks!

New York Cheesecake III

I followed the recipe exactly with the only exception being I used two packages of Neufatchel cheese and the rest cream cheese. It came out a little "loose" in the middle, but that may be because of the lighter cheese. Other than that, it had very good flavor and I thought the crust was perfect for the cake. If I make again I will probably use all cream cheese.

Cajun Chicken Pasta

Excellent! I followed the recipe almost exactly. I did omit the salt though because my cajun seasoning had plenty, and so did the lemon pepper. I used a combination of heavy and light cream (only because it's what I had in the house) and it seemed a little thin so I thickened it with some cornstarch. Once it I took it off the heat it seemed a little thick, so I probably didn't need to thicken it at all. Used angel hair pasta (just a personal preference) and the flavor was awesome. My husband loved it too. Will definitely make again. Thanks, Carol!

I really expected to be wowed with this recipe, but it was very much like chicken piccata like another reviewer said. The breading and sauce were tasty, but I didn't find the dish extraordinary.

Penne and Vodka Sauce

I thought this was very good, but very rich. I added a clove of garlic to the pancetta as it was browning and threw some parmesan cheese in at the end. I think the cheese put it over the top on the richness scale. I will probably make again, but use light cream and less or no cheese.

Black Bean Vegetable Soup

Excellent! I followed the advice of other reviewers and cut the broth to 3 cups and added a can of beans. I also added a splash or two of hot sauce. It was very good. I can't wait to have it for lunch tomorrow. Thanks, DeeDee!

Chicken Enchiladas I

This recipe took a little more work than I expected, but it was worth it. I used Sara's enchilada sauce (from this site) as recommended by other reviewers. I also reduced the tomato sauce, omitted the water and used a cheddar jack mix. I also omitted the green pepper and used canned green chili peppers instead. It was a bit hot for me and I will probably tone it down next time, but my husband loved it and I will definitely make it again. Thanks!

Penne with Spicy Vodka Tomato Cream Sauce

Very good. After reading the other reviews I used 1/2 cup vodka and 3/4 cup of cream. I actually used half and half, but I think cream would have been better. I also threw in some grated cheese while it was cooking. My husband loved it. Will definitely make again. Thanks!

Fresh Asparagus and Chicken Casserole

It was okay...I reduced the liquid and it was still watery, so I added a little flour mixed with water to thicken it up after cooking. Needed some salt and pepper also. I think next time I will add the flour while it's simmering and a little more seasonings. Will probably make again with modifications.

Baked Salmon II

I followed the recipe exactly and it seemed a little on the salty side to me. Next time I will cut down on the oil and salt. But my husband - who doesn't really care for salmon - cleaned his plate. Will definitely make again. Thanks!
