BOCA® Sausage, Barley and Bean Soup

Not impressed. I love boca sausages cooked on the stove top, but did not enjoy it in this soup. Would be better without the sausage.

Absolutely the Best Nacho Dip Ever

Personally, I loved the recipe. The true test is the Bunco ladies. They ate some, but no rave reviews and I did take some home. I added black olives and skipped the cucumber slices. Thanks, Jeff, for adding a new appetizer to my list!

Fish in Foil

This is the best baked fish I ever had. I removed the seeds and membranes from the jalapenos before putting the slices on the fish. It has just the right amount of flavor, without being too spicy. I'm not a big jalapeno fan and ate all the jalapenos after cooking them like this! I just served the foil packets on each plate so people could have their own little bit of "dipping sauce." (I put a lot of lemon juice on the fish before baking). I used frozen Blue Hake fillets that I had thawed before baking. Schwan's sells these and I don't think I will make this fish any other way now. I baked mine for 20 minutes and they were perfect. I probably used half the olive oil and used a lot of fresh lemon juice instead. Thanks, Denyse. This will be a regular meal at our house now!

Broiled Tilapia Parmesan

Even my 2 yr old and 4 yr old ate this one. I must admit I was thinking "what am a feeding to my family?" as I glopped the white stuff on the white fish. But, somehow the strange combination does work. The fish was not the least bit "fishy." I also put the spices on top instead of combining it with the mayo mixture (only because I have problems following directions!). It turned out fine. I would definately make this again! We even used light mayo and the Brummel and Brown yogurt spread and it was still good. Enjoy!

Baked French Toast

I had no problems fitting the bread in a 13X9 pan. Thanks for the suggestions in using the 6 eggs and 1 c. milk. We used eggnog, but I don't think it mattered. (Maybe you could taste the eggnog more if you skip the topping). I made all the topping and just poured some of it on the top of the bread. I think it works well to use your judgement and not to use the whole amount. We LOVE sweets and that would have been a little much, even for my family! I used Brommel and Brown yogurt spread in the topping and it worked out fine! Great recipe (with the changes). Will use again and again!

Banana Banana Bread

All I need to say is that this is the first time my Grandmother asked ME for a recipe!!! Says it all, really. I used 1/2 cup white sugar and 1/2 cup brown sugar. The bread still turned out dark, dense and moist. Even with the additional sugar, it was not overly sweet. Easy recipe and boy is it fragrant! This will now and forever more be the banana bread recipe in my recipe box!

Spiced Pecans

Very good recipe. Nice and easy! I cooked these at 30 degrees for 50 min, turning every 10 min, but think I would stop after 40 min next time. I was temped to stop, but didn't. They were just a little too done, but still yummy. Note: If you aren't a huge clove fan, reduce or eliminate it. I love cloves and it's almost too strong for me. I used a jelly roll pan lines with foil. Made stirring very easy with the little lip to hold in all the nuts. Enjoy!!! and Thanks, Pat!
