Baked Chicken Wings

Perfect flavor. The only thing I did differently is that I let the chicken marinate for one hour in the fridge in the plastic bag. Did some chicken wings and some drumsticks and they all came out perfectly in one hour. Flavorful, but not too spicy. We'll be making these again and again!

Peppermint Meringue Cookies

Although these are AWEFUL if you misread the recipe (like I did the 1st time around) and use 1/8 CUP of vinegar vs. 1/8 TEASPOON... When following the recipe, they turn out great! I added 3 drops of pink/red food coloring and 1/4 teaspoon of peppermint and it was just the right amount of minty and sweet. Can't wait to make a bunch for Valentine's Day!

Caramel Bars

I actuall think it would not work as written. Thanks for all the advice. However it is one of the best bars we've made after doubling the flour, oats, baking soda and salt and using 1 c. meled butter. We put 3/4 of that mixture in a 9x13 pan that was lined w/ tin foil and sprayed w/ cooking spray. We melted a whole 14 oz bag of caramels (50 pieces) with 7 T of milk (to save a little on fat content). We used pecans vs. walnuts. Made this way they were delicious!!! We put in the fridge and cut after they cooled for about an hour. Someone should re-write this recipe the way it actually works and call it something else. Thanks to all for their comments so ours turned out great on the 1st try!

Curried Coconut Chicken

Simple BBQ Ribs

Seriously???!!!! I've tried ribs sooo many ways and this is the easiest and BEST. Only way I'm making them from now on. Sweet Baby Ray's Honey BBQ was just perfect! A keeper!

Kalamata Olive Tapenade

Very tasty. Thanks for the tip of pitting olives w/ a meat mallat. Saved me a few $s and worked great! Don't skip the lemon juice. Adds a lot. I used Vinta crackers, which stood up very well to this topping. It's great spread w/ goat cheese and the tapenade on top.

Wacky Mac

We thought too dry (and I even added 1/2 can tomato soup and 1 c. water). We only added 1 t. each of cayenne pepper and chili powder and a little spicy for us. We used chili w/ just beans. If using some w/ meat, watch the meat portions because of adding the ground beef. Noone liked it enough to make again.

Pecan Pie V

I loved the taste of this pie. I did not give it 5 starts because of the thin unattractive layer it leaves on the top. Really would look unappetizing without some pecan halves thrown on the top part-way through baking. But, the taste is fabulous and my 2 pecan-pie loving friends really enjoyed it. For baking, I pre-heated the oven to 400 degrees and baked for 10 minutes. Then, I left the pie in the oven and turned the heat down to 350 degrees. It was done in another 25 minutes (so 35 mins total baking time) and I probably could have cooked it a little less and it would have been o.k. I think for Christmas, I will put a "spiced pecan" on each slice. I added the pecans to the top about 10 minutes before it was done. What this pie lacks in presentation, it makes up for in flavor and consistancy.

Maple Fruit Dip

We really didn't like this one. I even used REAL maple syrup and regular whipped topping (but low-fat vanilla yogurt). I was hoping it would be a hit since it's not so fattening, but no go with my crowd.

Kicky Steak Strips with Rice

We loved this. We made one and a half pounds of steak and double the marinade. I added 1/2 cup of brown sugar to the marinade and it was perfect. I heated the oil in a large non-stick pan so the meat could be in a single layer. I cooked on medium for about 3-4 minutes per side. I guess it depends how thickly you slice the steak. I sliced mine between 1/4 and 1/2". It was snowing here and it was so nice to make such a tasty recipe where I happened to have all the ingredients on-hand. We are going to make this again - soon!

Dough Ornament Recipe

Lots of fun! Our puffed a little, but still held their shape. I though they turned out really cute. We used fabric markers (worked great for details) and craft paint and glitter glue. Use a straw instead of a toothpick for the hole - toothpick hole too small to put raffia/ribbons/twine through. We used spray polyurithane to preserve and it seems to have worked well. - Very, very cute and relatives loved getting these from the kids.

Scented Applesauce-Cinnamon Ornaments

This was a fun project. Definately use something larger than a toothpick for the hole - (we ended up needing to drill a larger hole through all of ours) - a straw would probably work better. Got the cinnamon at Sam's Club for a little over $3 (exactly 3 c.). Took about 3 days to dry if not baked. I would cut them at LEAST 1/4" - probably a bit thicker. We used fabric paint to decorate and craft paint. They turned out really cute! My 5 yr old and 3 yr old had a blast. Also, after paint dried I used spray polyurithane on both sides to preserve. I was worried it would interfere with the smell, but it didn't. All the relatives loved receiving these from the kids this year!

Mom's Pumpkin Pie

This was wonderful. I doubled the recipe and it made 3 regular pies. I cooked it about 10 minutes longer than recipe calls for. It does rise up and it made me nervous, but it turned out great. We loved it cooled in the fridge. The spices were just right (I think the cloves make all the difference...). This will be my one and only pumpkin pie recipe!

Old Bay® Steamed Shrimp

Not all that flavorful and our shrimp turned out way overdone. I'm not a great cook and am not exactly sure what "steam until tender" means. Are you supposed to keep the shrimp on the heat or take off the heat and just leave the cover on? I think I left the heat on medium low for the 5 minutes and that could have been how I ruined it. I love the idea of shrimp like this, so please post and let me know what I did wrong. Thanks!

Coconut Cream Pound Cake

I am soo bummed mine turned out over-done, because it would have been great had I not over-cooked it. I used 2 (stoneware) loaf pans and baked for 1 hr 20 min then checked it and it was already over-done. Will definately check much sooner next time. Believe me, there will be a next time. It was still good and can't imagine how heavenly it would be if it were cooked properly!
