Burgundy Pork Tenderloin

This was THE BEST TENDERLOIN EVER I have made!! And I have made tons of pork tenderloin recipes. I think this was the most tender, most flavorful one I have ever made. Everyone LOVED it. I did dredge the tenderloin in flour, and browned it in olive oil. Then I put it into the 13 x 8 pan with 1 cup beef broth and 1 cup of cabernet. I seasoned it with salt, pepper, rosemary and garlic powder, cooked till 155, took it out to rest. I poured the sauce into a saucepan and whisked in 1 pack of McCormick brown gravy, brought to simmer for a minute, then let it sit to thicken. I reheated it when the meat was sliced. You MUST try this, you will love it.

Salisbury Steak

Excellent - so flavorful, meat is moist and tender. I accidentally put 1/2 cup of onion soup into the meat instead of 1/3 and it was still fantastic. Everyone loved it and I will be making it again very soon - thanks for a great recipe

Baked Buffalo Wings

These were excellent -- very tender and flavorful. I cut of the tips of the wings. I placed them on a rack in a foil-lined pan and put in the fridge for 3 hours before baking. I baked them for 45 minutes before brushing both sides with the butter/hot sauce mixture. That really made them crispy and delicious. I will definitely be making these again.

Red Wine Pork

This pork roast was fantastic. I followed the recipe and the roast was very tender and flavorful. The gravy was very rich and tasty, and the bacon grease adds so much flavor. Everyone raved about it and I will definitely make it again!

Roasted Roma Tomatoes and Garlic

These tomatoes are fantastic!! A great way to use winter tomatoes, they become very sweet and tasty when roasted. Sometimes I only use 2-3 cloves of garlic and place the slices between the tomatoes in the roasting dish. Also I use dried basil if I don't have fresh on hand. I usually roast them the night before and put them in the fridge. Then the next day I chop them up and heat them up and mix with hot pasta, then sprinkle with romano cheese - Delicious!
