Homemade Tomato Basil Pasta Sauce

This was delicious!! I added a little italian seasoning and red pepper flakes (cause we love spicy) and used red wine instead of water. YUM! My hubby wished it was a little thicker, but overall great flavor, easy, and fast! Will definitely make again!!

Sweet, Sticky and Spicy Chicken

So good and easy!!! Definitely flour chicken first. I also added a tsp. of cornstarch to sauce. Mmmmmm! Perfect sweet and spicy mix...and we LOVE spicy!

Pork Dumplings

These were delicious! Very time consuming putting them together but totally worth it! The only problem I had was that they all stuck together when steaming them. But they tasted great!

Caramelized Spicy Pumpkin Seeds

Very good! I don't usually have much luck with pumpkin seeds, but these were tasty. Much more sweet than spicy or savory, but they have a little kick at the end. Yum!

Spicy Garlic Lime Chicken

Wow! That was delicious! My hubby and I LOVED this recipe! I doubled the spices and cut the chicken breasts in half as many suggested. I also added a shot of tequila with the lime juice. Mmmmmmmmmm! **I just made this same recipe with salmon filets. So good! I lessened the cooking time to 4 minutes per side and then cooked them for about another 4 minutes after adding the tequila and juice ( I used lemon juice this time b/c that's what I had on hand). I love this recipe!

Shrimp, Sausage, and Fish Jambalaya

Wow! This was to die for!!! I made it extra spicy with extra chili powder, used brown rice, and a little less butter (this has so much flavor I didn't need the extra calories for the taste). My husband and I absolutely LOVED this recipe!!

Wow! So delicious! I omitted the ground beef because I didn't need that much sauce. I also added a heaping 1/2 tsp of cayenne pepper because my family loves spicy food. So good!

Salsa Chicken Burrito Filling

Very yummy and easy!! I followed many other reviews and cooked 3 chicken breasts in the crock pot with all the other ingredients on high for 4 hours. Then mixed in a can of refried beans just until heated through. I used all of the seasonings just like it was written and we liked it (but we love strong and spicy flavors.) I also rolled the burritos and put them in a 9x14 dish and covered with green chile and cheese. Then baked them at 375 for 15 minutes. YUM!

Black Bean and Corn Salad II

Yummy and very versatile! I brought it to a football party where fajitas were served for dinner. This was used for chip dip during the game, as a salad on the side with dinner, and as a topping for the fajitas! Yum! It makes tons though so next time I will probably make half. Oh, I also used 1/2 cup fresh lime juice and only 1/4 cup olive oil as per other reviews.

Downeast Maine Pumpkin Bread

This turned out great even in high altitude! I followed many reviewers and only used 1/2 cup of oil and 2 cups of sugar but added 1/2 cup of applesauce. I also added raisins. Next time I will try it with chocolate chips! This made 12 muffins and one loaf. SO yummy!!
