Nana's Slow Cooked Meaty Tomato Sauce

Wow! So delicious! I omitted the ground beef because I didn't need that much sauce. I also added a heaping 1/2 tsp of cayenne pepper because my family loves spicy food. So good!

Black Bean and Corn Salad II

Yummy and very versatile! I brought it to a football party where fajitas were served for dinner. This was used for chip dip during the game, as a salad on the side with dinner, and as a topping for the fajitas! Yum! It makes tons though so next time I will probably make half. Oh, I also used 1/2 cup fresh lime juice and only 1/4 cup olive oil as per other reviews.

Shrimp, Sausage, and Fish Jambalaya

Wow! This was to die for!!! I made it extra spicy with extra chili powder, used brown rice, and a little less butter (this has so much flavor I didn't need the extra calories for the taste). My husband and I absolutely LOVED this recipe!!

Lime-Marinated Grilled Salmon

I used a bit more lime juice and marinated this for more than 2 hours after reading reviews that said the flavor isn't very strong. Overall, it was very good but we still wanted a bit more lime flavor. This is a great recipe if you love the natural flavor of salmon.

Grandma's Brisket

This was good. It was a bit sweet for our liking, but overall it was a yummy dinner. I cooked it is the crock pot for 6 hours on low and followed some other reviewers advice to use 1/2 ketchup and 1/2 chili sauce. I also added 2 tsp garlic, 2 tsp Worcestershire, and 2 tsp Siracha. I also used carrots, onions, and potatoes but this would be good with any root vegetable.

Downeast Maine Pumpkin Bread

This turned out great even in high altitude! I followed many reviewers and only used 1/2 cup of oil and 2 cups of sugar but added 1/2 cup of applesauce. I also added raisins. Next time I will try it with chocolate chips! This made 12 muffins and one loaf. SO yummy!!

This turned out yummy, but it calls for WAY too much water. We only used 1 cup and it took 45-50 mins for it to get close to sloppy joe consistency. We also added more ketchup and Worcestershire sauce towards the end because the water seemed to dilute the flavor.

Blackened Salmon Fillets

We LOVE spicy so this was good to us but would probably be too spicy for the average joe. I thought that the proportions of spices were a bit off - too much paprika and not enough other spices. Next time I will probably try the spices from a blackened chicken recipe I found on here instead. Overall a decent meal though. Also, I only used some olive oil instead of butter as per other reviewers suggestions because we are trying to cut calories and it wasn't smokey at all while cooking!

Italian Green Beans

I thought these were really good. I used the italian dressing from Olive Garden (which I got at Costco) and they were more than just beans with dressing on them. Definitely depends on the quality of salad dressing you use.

Garlic Red Potatoes

After reading the reviews, I ended up cooking this in the microwave for 15 mins. It worked perfectly! I thought this was delicious! I also added 1 T of italian seasoning. Yummy!!! The only reason I am giving this 4 stars instead of 5 is because of the cooking change I made due to lots of complaints in the reviews about the cooking time being way off. I will definitely make this again!

Banana Sour Cream Bread

Incredible even at high altitude!!!!!! I halved the recipe using 3 bananas and 2 eggs. Baked at 325 for about an hour and half. (Checked at an hour and then again every 5 mins until my toothpick came out clean.) Made one loaf. Mmmmmmmmmmmmmmm!

Italian Sausage Soup with Tortellini

So good! I didn't bother to peel or seed the tomatoes. I just diced them up and threw them in the pot and it was delicious! I also used hot italian sausage because we like some heat. I will definitely make this again!
