We thought this was pretty bland. I even added spices to it (italian seasoning and garlic) and used a sauce that we usually love and we still didn't care too much for this.

Chef John's Succotash

This was a great mix of veggies and flavors! The only thing I will change next time is to cut down on the amount of cumin (and don't get me wrong, I love cumin!) The flavor of cumin overwhelmed the flavor of the veggies, but overall a great recipe. I also love how flexible this recipe is--it lends itself to many different veggies. YUM!

Tomato Pork Loin Chops

We enjoyed this recipe! It definitely has some heat to it, but we love spicy food. I didn't have any fennel so I omitted it, I used a can of fire roasted diced tomatoes instead of tomato sauce (I loved the bits of tomato!) and I didn't cook it as long as it says. My pork chops were pretty thin so I browned and cooked covered for 10 mins (like it says) but then only cooked uncovered for maybe 10 mins instead of 15. Will make again!

Healthy Mexican Chicken Bake

Very good and easy! I used a small jar of On The Border salsa (which we love!) instead of just one cup. Also waited and added the cheese the last 5-10 mins of cooking time so that it wouldn't burn. Will make again!

Contadina® Garden Vegetable Pasta Bake

We enjoyed this! I used hot italian sausage (because I already had it) and ground it up. My husband didn't love the carrots, but overall said it was good. I loved all the veggies in this! I also used 2 tsp dried italian seasoning instead of fresh parsley (because I don't care for parsley.)

Slow Cooker Buffalo Chicken Lettuce Wraps

I cut this recipe in half and cooked chicken on high for 4 hours. The chicken was pretty dry, so next time I'll cook it a little less time. Otherwise, this was a yummy recipe that could be used in so many ways! Lettuce wraps are great, but its also yummy on salad or in a traditional tortilla wrap.

Spicy Beef Fajitas

These were very yummy! I loved how the Anaheim peppers made this a little different than normal fajitas. Next time I will either use a little more meat or one less pepper (depending on how many people I'm cooking for) because we thought the meat to pepper ratio was a little off. I will also try making my own seasoning (from this site) so that I can make it extra spicy! (We love spicy!!)

Chef John's Stuffed Peppers

I thought this was to die for! I followed the recipe pretty closely and it was amazing! I did use mozzarella cheese for the topping instead of parmesan because I ran out. I used a 10 oz can of Rotel with green chiles and used 1 Tablespoon dried parsley instead of fresh. So yummy!

Cajun Roasted Pork Loin

This was good. I used a 1.24 lb pork tenderloin but ALL of the seasonings for the 4 lb roast after reading reviews that said it needed more seasoning. This was spicy, but we LOVE spicy food. I reversed the cooking order to 425 for 15 mins and then decreased to 300 for about 35 mins more. I also added 2 medium red potatoes to the other veggies. (I think sweet potato would be delicious with this!) I didn't have much juice left at the end, so I just nixed the gravy, but will try it next time because many people said it was amazing!

Hidden Veggie Meatloaf

I am desperately trying to find recipes that secretly include veggies to get into my family, but, unfortunately, this was not our favorite. I followed the recipe pretty closely and it was very bland, had a strange texture, and just crumbled apart. Oh well!

Strawberry Spinach Salad III

We really enjoyed this! My husband loved the hint of spiciness with the sweetness of the fruit. I added strawberries and mandarin oranges to our salad and used honey roasted sliced almonds instead of sesame seeds. We also grilled some chicken breasts and sliced them on top of the salad. YUM!

I was surprised that this was decent since it was made in a slow cooker, but I will probably stick to cooking in the oven in the future. Definitely cook in the oven at the end to crisp chicken.

Asparagus with Parmesan Crust

These were very yummy! The only issue I had was that they were hard to get apart to eat since the cheese melted over everything. Not a big deal unless your serving them for a fancy dinner. :)

Southern Candied Sweet Potatoes

Followed the ingredients in this recipe to a "T" and it came out very good! The only thing I changed was that I cut the sweet potatoes into chunks instead of slicing them to make stirring while cooking easier. Great for Easter dinner!

Easy Slow Cooker French Dip

These were very good! I made some changes based on other reviews: I added 1 beef bouillon cube, some garlic power, onion powder, Worcestershire, and 2 minced garlic cloves, and used a dark beer. My hubby didn't think the meat had a ton of flavor, but the sauce definitely did! Will make again!
