Jamie's Minestrone
Fantastic recipe! I made a few minor adjustments to the recipe such as, I used garbanzo beans instead of kidney beans. I also used minced beef in. I browned the meat in a bit of olive oil and when partially cooked I added the garlic, followed by the carrots and celery. One minute later I added the onions and let the mixture cook through. I used two veggie cubes and two chicken cubes instead of chicken stock and I also used one small can of tomoto puree. I had to add more water since I used meat and since I also added a bit more vegetables than were called for, but that's due to personal liking. I froze half and will definitely enjoy it in the future!
