Pork Chalupas

I've made this recipe twice now, and both times it turned out better than Fabulous, better than Delicious - FABULICIOUS! I made such a mess of the first printed out copy of the recipe, I needed to print another copy. When I went to locate it in my Allrecipes saved recipes, I couldn't find where I had saved it! I went bonkers and surely thought I had lost it forever and had to do some real searching. I couldn't even think of the name of the dish! This last time I used a boneless Pork Loin. OMG! I can't describe how good this is! I break it down into several servings and freeze them for later. We use Burrito size flour tortillas, along with some Mexican Queso Fresco, wrap it up, and warm in the oven for a few moments. Top with lettuce, home-made salsa, Mexican Crema, and finish with extra Queso Fresco. YUMMY! I think I'll go home and eat some tonight!

Salmon Penne with Basil Pesto Cream Sauce, Artichokes, and Asparagus

This is an absolutely outstanding dish! I first ate this dish at McCormick & Schmick's Restaurant. Once I tasted it, I had to go home and duplicate it! I've pulled numerous recipes together to come up with just the right combination of ingredients and I did it! This recipe is approximate to the original dish. We love it.

Zucchini Mousaka

Ron and I both love this recipe. I think Veronica likes the filling without the squash. I have used both a zucchini and yellow squash mixture, not having enough zucchini, and it was excellant. This makes enough filling to have for another meal. Freezes well. Served with Tomato, Mozzarella, Basil, and Olive Oil Salad. Use Grey Salt and Fresh Cracked Pepper.

Macaroni and Cheese with Chicken and Broccoli

SORRY - but my family found this too boring. The last reviewer stated that the basil was overwhelming and the fresh tomatoes added nothing to the dish. DITTO.

Minced Beef with Black-Eyed Beans

I make this wonderful dish each time I have leftover roast beef. In fact, I purposely make to much roast so that we can have this dish! The only way I deviate from this recipe, is to double the ingredients, otherwise, I follow the directions to a “T.” Substitutions and deletions just aren’t right. I serve it atop boiled jasmine rice and my sides are Asma’s choice, warm pitas, raita, and finely sliced onions laced with lemon juice. This dish is F A N T A S T I C!

Lori's Famous Crab Cakes

I made these exactly as the recipe directed. I could not get them to hold together to fry. The ingredients were to wet. They came apart in my oil. This was such a disapointment. Such a waste on good crab meat.

Scalloped Potatoes II

E U R E K A ! ! ! I agree with another reader, this is so much like the "Original Scalloped Potatoes" I enjoyed as a child. All other recipes have cheeses in them making them an Au-Gratin Potato, which is not a true Scalloped Potato. I would have given this a 5 STAR rating, except for the omission of thinly sliced onions layered between the potatoes. I have been eating these potatoes over 40+ years! And of course you can always add other ingredients to change the casserole to suite your taste!

Cheese and Sausage Stuffed Zucchini

A VERY GOOD dish. With an overabundance of squash, this is my summer to have a Zucchini dish nearly every night! We don't mind! I made it exactly as the recipe called for. No changes needed to be made. I will make it again for my family.

Shrimp Red Thai Curry

I know this sounds weird, but, add 2 large julienned, unpeeled, seeded cucumbers during the last 5 minutes of cooking. AND 10 - 15 Basil leaves. Also substitute GREEN for RED curry. AN EXCELLANT DISH.
