Buttercream-Coconut Cake Icing

This is an excellent frosting. It spread really well and the coconut flavor didn't overwhelm. I took away one star because I found it overly sweet, even on my spice cake which can usually withstand a sweet icing. I'll probably try it again, but maybe instead of half butter and half shortening, I'll divide them into thirds with cream cheese.

Amish Slaw

This recipe is delicious if you like a light fresh-tasting non-mayonnaise cole slaw. I substituted Splenda for the sugar and cut it by about a third. I'll cut it by half next time because it still seemed a little sweet to me. Also, I only used about 2/3 of the dressing.

Pretty darn good and super helpful when I'm cutting down on carbs. Not fluffy and nowhere near a regular pancake, but does satisfy the pancake jones for a while.

Classic Restaurant Caesar Salad

It's not that it was inedible, but the lemon was overpowering and it just didn't have that Caesar mojo. I preferred bottled dressing. So I'll keep looking for the great Caesar Salad dressing that gets made at your table in the best restaurants.

Coconut-Lime Cheesecake with Mango Coulis

This is CRAZY delicious. I had a 10" spring form pan and I increased all ingredients by half. Perfection. Personally, I didn't think the mango coulis added anything, but my guests liked it. The next day I added the juice of half a lime and a teaspoon of sugar to the coulis and then I thought it was outstanding.

Banana Banana Bread

I had a ton of overripe bananas so I decided to test this recipe against Best Ever Banana Bread on this site. This was good and I wouldn't turn down a slice, but it was heavier than the other recipe and because the top opened up it was harder to slice without making crumbs. I also thought the butter taste interfered with the banana taste. My only modification was to leave the pecans out of the other recipe to compare the two more fairly.

Best Ever Banana Bread

Yes, it is the best ever banana bread. I had a ton of overripe bananas so I decided to test this recipe against Banana Banana Bread on this site. This was hands down the winner. Lighter, easier to slice, prettier, sweeter and more balanced. Plus, I love that it uses oil and the other recipe was a bit overwhelmed by the butter. My only modification was to leave out the pecans to compare the two more fairly.

Grilled Chicken Salad with Seasonal Fruit

Delicious! I substituted raspberries for strawberries, Splenda for sugar, spring mix for the bibb lettuce, and added some feta cheese. Came out great...everybody raved.

World's Best Low-Carb Lasagna

I've made this twice over the past year and both times each and every guest said it was the best lasagna they'd ever had. And that was despite the fact that I substituted creamed cauliflower for the noodles the first time and zucchini slices the second. (My wife has diabetes.) If you're not cooking for a special diet, then there is no need to alter a thing in this recipe.

Roasted Vegetables

This is a good basic recipe as presented that you can adjust to your own liking. I personally wanted a little more taste so I took another reviewer's suggestion and added balsamic vinegar...about one to one with the olive oil. I used zucchini, peppers, onion, eggplant and mushrooms and had to roast them for 50 minutes. That cooked the veggies thoroughly without making them overdone.

Garlic Broccoli Spears

This is darn good. I made it exactly as as specified and mine had a subtle flavor. It didn't overpower the broccoli but rather made it tasty. It didn't seem too lemony or garlicky at all.

Festive Tossed Salad

I was a little leery of mixing the vegetables with the cranberries and feta, but it was delicious. I took away one star because I thought the packaged dressing was too sweet. I'm going to search for a good homemade Italian dressing to pair with it.

Sweeter Muffins

What I love about a great basic muffin recipe is that you can customize it to your needs. I've made this one as written, which is very good. I've also added cinnamon and vanilla, and replaced 1/2 the oil with applesauce to make a sweet muffin. It's also incredibly fast and easy.

Hunan Kung Pao

This was very tasty, and you can customize the ingredients. I used all shrimp instead of chicken, and added celery and eggplant. I also didn't have peanuts so I used cashews. I don't know what "rice wine" is so I used rice wine vinegar. Delicious.
