World's Best Low-Carb Lasagna

I've made this twice over the past year and both times each and every guest said it was the best lasagna they'd ever had. And that was despite the fact that I substituted creamed cauliflower for the noodles the first time and zucchini slices the second. (My wife has diabetes.) If you're not cooking for a special diet, then there is no need to alter a thing in this recipe.

Roasted Vegetables

This is a good basic recipe as presented that you can adjust to your own liking. I personally wanted a little more taste so I took another reviewer's suggestion and added balsamic vinegar...about one to one with the olive oil. I used zucchini, peppers, onion, eggplant and mushrooms and had to roast them for 50 minutes. That cooked the veggies thoroughly without making them overdone.

Garlic Broccoli Spears

This is darn good. I made it exactly as as specified and mine had a subtle flavor. It didn't overpower the broccoli but rather made it tasty. It didn't seem too lemony or garlicky at all.

Festive Tossed Salad

I was a little leery of mixing the vegetables with the cranberries and feta, but it was delicious. I took away one star because I thought the packaged dressing was too sweet. I'm going to search for a good homemade Italian dressing to pair with it.

Sweeter Muffins

What I love about a great basic muffin recipe is that you can customize it to your needs. I've made this one as written, which is very good. I've also added cinnamon and vanilla, and replaced 1/2 the oil with applesauce to make a sweet muffin. It's also incredibly fast and easy.

Hunan Kung Pao

This was very tasty, and you can customize the ingredients. I used all shrimp instead of chicken, and added celery and eggplant. I also didn't have peanuts so I used cashews. I don't know what "rice wine" is so I used rice wine vinegar. Delicious.

The Real Mojito

I followed the instructions to the letter and it was perfect for my taste. Delicious and refreshing, with the just the right combination of mint and lime. I'm cool as a cucumber as I write this on a searingly hot day thanks to that mojito.

This is delicious and almost exactly like the great fatoosh I get at a local restaurant. I've made this recipe verbatim and it's excellent, but I personally like to add some feta cheese. I omit the pita because I make a big batch and save it, so there's no way to keep it from getting soggy.

Big Soft Ginger Cookies

If I could give these 500 stars I would. They were the best tasting cookies I've ever eaten. Just the right combination of spice and sweetness, and with a great soft texture. I substituted 1/2 C butter and 1/4 C applesauce for the margarine, but otherwise left the recipe alone. The dough was sticky but not impossible, and you need to flatten them on the cookie sheet. Also, they needed about 13 minutes in my oven.

Avocado Dessert

This is really good, like a subtle pudding. I cut the vanilla in half based on other reviews. I also halved the sugar because it seemed like a lot, but ended up adding back a couple teaspoons. I tried another version substituting lime for the vanilla and it was good, too. They both felt like they would be good as a sauce for something else.

Grilled Portobello Mushrooms

This was yummy. I couldn't believe I was eating mushrooms. I didn't have canola oil so I used grapeseed oil. Also, I fell asleep so they marinated about three hours. It didn't hurt it at all. Since this was the first time I grilled mushrooms, it would have helped if the recipe specified grilling them face up, face down, or half the time on each side (which is what I did).

Peanut-Ginger Marinade

This is SO GOOD. My guests could not stop raving about it. I almost took a star away because it made such a sticky mess on the grill, but once I tasted it I realized that it was a small price to pay for such a delicious dish.

Grilled Asian Chicken

What a perfect marinade. The chicken tastes exquisite without the need to marinate for a long time. I substituted Splenda for the sugar (diabetic wife), and took the advice of others to substitute water for half the soy sauce. I also gently heated the chicken in the marinade to room temperature before grilling.

Chinese Chicken Salad III

I just brought this to a party and everybody raved about it. The dressing was outrageously delicious. (I added slivered almonds to the salad and omitted the sugar from the dressing.)

Pumpkin Bread

This pumpkin bread is delicious, especially if you like spice cakes. The bread is moist and has a tasty crust. I was amazed at how easy it was. It smelled so good that I had to taste it right out of the oven. But that was a mistake because its flavor was much better once it cooled. Modifications: I halved the recipe and used one egg plus one egg white. Also, I ran out of white sugar so used about half brown sugar. I also substituted Better Balance for the butter. Finally, the recipe seemed to call for a lot of cloves so I substituted Allspice for about half the cloves.
