Salisbury Steak with Mushrooms

This was exactly the recipe that I was craving. I haven't had this dish in years! My wife loved it and asked me to make it again, and she usually likes a different style of cooking. I made it with venison, but it would be great with ground turkey or ground beef. I served it with a spinach salad, mashed potatoes, and green beens for an old-fashioned, comfort-food, delicious dinner. I did remove the steaks and saute the onions and mushrooms a little prior to returning them to the pan and adding the broth. Note that you could substitute beef bouillon for the broth by adding 1 tablespoon or 1 cube and a cup of water for each cup of broth. When I make it again, I may add a splash or two of worcestershire sauce, but the recipe was great as is. Add more or less onions or mushrooms to suit your taste. Double the gravy to have plenty for mashed potatoes. It is excellent and doesn't require condensed soup like most of the other similar recipes on this site.

Chicken Soup

This soup lacked flavor. I suggest finding another recipe or taking the recommendation of other reviewers and using leftover bones from the chicken to make the base for the soup. I also didn't like the lack of celery or noodles as other reviewers have also commented on. There are much better recipes on this site for chicken soup. I did like the idea of adding zucchini for a twist on the traditional soup recipe.

Simply Delicious Chicken Rice Soup

This was a nice, basic, quick, and simple chicken and rice soup that was exactly what I was looking for to use up some turkey leftover from Thanksgiving. The recipe was very good exactly as written, but next time I think I'll add an extra carrot, some mushrooms, and some parsley. I will make this again.

Chef John's Minestrone Soup

This was a good recipe and I'll make it again with a some tweaks. I made the recip as described this time, with only one exception. I didn't have any cranberry beans, so I used a can of kidney beans. As the recipe notes, you'll need to add quite a bit more water as the soup cooks. Next time, I'll probably add more chicken broth right from the start and cut back on the salt a little. I think this would improve the flavor. The red pepper flakes give the soup a little spice, which I don't associate with minestrone soup. I like spicy foods, so I didn't mind that, but I might cut back a little in the future. Next time, I'll definitely add a carrot or two and some zucchini. I might also add a potato. As Chef John says, add whatever you want, but I think these would be good additions. Overall, I enjoyed this and will make it again.

Jambalaya

Loved this recipe! I added an extra bell pepper, extra 1/2 onion, 1 extra clove of garlic, and I used 2 14.5 ounce cans of tomatoes. I also doubled the red pepper flakes and put in several extra dashes of pepper sauce because we like a little extra heat. This turned out great!

Mexican Rice II

Unbelievable Rolls

Ultimate Shrimp Scampi

I loved this dish and so did my wife. The asiago cheese has such a distinct, excellent flavor that I loved in this dish. I think it would taste fine with Parmigiano, but those that don't try it with asiago are missing out. I also loved the avocado in the dish, which I thought was a little strange when I first read the recipe, but I'm really glad I added it. I did add an extra clove of garlic and about 1/4 cup of chardonnay rather than 1 tsp. I also added 12oz of baby spinach to the scampi about a minute before it was finished cooking based on another reviewer's recommendation, which I really liked. Excellent recipe!!! I'll certainly be making this again.

Perfect Pulled Pork

This was excellent. As some reviewers recommended, I substituted beef broth for the water and I ommitted the salt. I also added some diced onion. One reveiwer said that this recipe lacked flavor, but when I made it, it certainly did not. This is a very good recipe.
