Pork Chops in Beer

I honestly do not understand why this recipe is rating so low!! THE CHOPS were PERFECT!! and super easy too!! I let the chops sit in the sauce for about an hour and a half prior to cooking. This made them super tender!!! I also added in a few 'smashed' cloves of garlic, some pepper, a pinch of cayenne, a dash of dry moustard and a couple dashes of worchestire sauce. Alongside the chops (in the sauce) I also added some largely chopped green and red peppers, and some onions. THEY WERE GREAT and a hit with the family... the beer was the perfect taste... not over powering at all!! LOVED THEM!! I would recommend this one again and again!

Cranberry Meatballs

These have become a hit in my family! The little one loves these, and she normally refuses to eat cranberries! I put in about half the required barbeque sauce for added sweetness. I've had a few parties and serviced this, and everyone just loves them - throughout the year, not just the holidays! FABULOUS! **EDIT** Just wanted to add to this review... I now make these pretty often... in a pinch for time, i'll purchase pre-made meatballs and then cook those in the sauce... HUGE time saver and still completely delicious every time!! Great quick meal to make after work too!

Big Soft Ginger Cookies

I just whipped up these cookies... the last batch is in the oven now... They are GREAT!!! I took another "rater's" advice, and let it sit for about 45 minutes, prior to baking. And they are soft fluffy!!!! I also used butter instead of margarine, and added an additional 1/4 cup of flour (since there's many reviews mentioning it's 'wetness' and i didnt have time to refrigerate).... this gave it the perfect consistency to work with, without sacrificing the texture of this cookie. I also did not have any cloves, so I replaced that with 1/8 tsp nutmeg and 1/8 tsp of pumpkin spice. And for good measure (and because i love ginger) I also threw in 1/4 cup of finely chopped candied ginger. These cookies are perfect!!!! Sooooo yummy! I didnt have any oranges kicking around (to replace the water) but next time i'm going to give that a shot as others have!

Coconut Shrimp I

My family really enjoyed this one... I thought it was pretty good, but not earth shattering. My family disagreed. They were raving! Maybe it's because they didn't have to clean up the deep fryer after :). I used large shrimp (not jumbo) and had A LOT of batter and coconut left over, so I ended up using a couple of chicken breasts cut into strips to make some chicken fingers. That was a hit too!! Other than that, fairly tasty. I'd make it again!

To Die For Fettuccini Alfredo

A great cream sauce!! I'm usually not a very big Alfredo fan (it's my husband's and child's fave, so I made it anyways) but this sauce was great! I'd definately make it again! Thank you!

Curried Coconut Chicken

Honestly, if I knew cooking with curry was this easy, i would have eaten it a lot more throughout the years!! I did do a couple of changes... i've doubled the coconut milk and the tomato paste, as I wanted more of a 'coconut' flavor. I also wanted extra sauce, as I added some potatoes, green peppers, onions and extra black pepper to the mix. Fabulous over rice!

Food for the Gods

i made this tonight, and it was fabulous!! I'm usually not one into anything too sweet, and i'm not really into dates either, but i made this for my bf... Anyways, i tried it, and it was great!! didnt find it too sweet at all - mind you, i took the advice of others and only used 3/4 cups of the white sugar. It didnt take away from the taste at all, or make it bland like i feared it might.... This one is a keeper!! Can't wait to serve it for christmas!

Banana Bread I

Pumpkin Swirl Bread

This bread was okay. In all honesty, I was looking for a 'bread' to make some sandwhiches with...and thought this would be neat, but it was more of a cake. I probably would have rated it higher had I been looking for a cake. The taste was good... but not something i could see myself craving very often...and i love pumpkin! I should also mention that I had the same problems with the 'swirling' as the other raters did... reading the reviews prior to trying this recipe, i even attempted 'extra' swirls... unsuccessful.. it was more of a layer of cream cheese and egg.

Excellent recipe!! ALWAYS a hit! The only thing that I don't like is it takes forever to scoop out the tomatoes, and then they always disappear in seconds! Very tastey though!

Simple Lemon Herb Chicken

This was awesome, and pretty easy and quick to make!! As i work 12 hour shifts, i'm often looking for 'quickie' type recipes, and this one is perfect. The only thing i did, was added some lemon pepper to the mix... lot's of it, as our family loves the mix of spice and sour.... Thanks for the recipe!

Gazpacho

Excellent Gazpacho recipe!! My BF who was apposed to even trying it, quickly gobbled it up! He even said, "we should make this again"! We added a jalepeno for a little kick and a LOT more garlic (approx 10 cloves when recipe was scaled down for 4 - because we're garlic lovers) and we did half and half of red and green peppers... other than that, no changes!

Eggplant and Pepper Parmesan Sandwiches

Perfection! I did do a couple small changes... The store I went to was out of tapenade and I was in a fix for time, so what I ended up doing was purchasing some olive bread to replace the tapenade for the olive tase. I also purchased some basil pesto and a jar of sundried tomatoes, and put them on the sandwhich. After assembling the sandwhich, I also drizzled with balsalmic vinegar and oil. Soooo yummy!!! Would definitely make this one again!

Pat's Mushroom Saute

Made these tonight, and they were perfect!! The only change I made, was to add about 5 extra cloves of garlic. (We are garlic lovers!!) Didnt mince them, just smooshed em with my pestal. My new recipe for sauteeing mushrooms!! Thank you!!

Green Beans With Walnuts

This dish was 'okay'. It went well enough for our Christmas dinner... but I dont know. It was missing something. I was expecting more of a punch I suppose... but to me, it was just okay. I wouldnt go out of my way to make this one again... but I may toss some walnuts in with my green beans for the additional color and texture, rather than leaving them plain janed. :) I think maybe next time I would try adding garlic, as the others have suggested.
