Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

I fixed this Saturday night for some friends who we recently went on a cruise with. This was our after cruise get-together that we were sharing photos and the video and I wanted to fix a dinner that we had on the cruise ship. The first night there was a dish called "Philadelphia Chicken". I have no idea why....couldn't find any such recipe, but this one's ingredients were similar enough I decided it would work. This dish was far better than what we had on the cruise! The pecans are perfect in the stuffing and the crust. I omited the pimento because I forgot to buy it, but it was still delicious. I served it with salads, baked potatoes and bread sticks. I would not change a thing in this recipe.

Mexican Cream Cheese Rollups

These were delicious. The only thing I wondered about tho, is there is no way I could have used 8 tortillas. I only had enough spread for 4. I would definately fix these again.

GA Peach Pound Cake

I, unfortunately had a big chunk of this cake left in the pan after I had let it cool for 10 minutes and tried to get it out. I pieced it together like a sand scupture and fixed a glaze with a little peach schnapps in it to try and cover the cosmetic defects! The cake was good but I didn't think it had a lot of flavor. I probably wouldn't fix it again because of the pan experience.

Baked Ziti I

When I fix baked ziti I usually just use the recipe on the box. This was much better. My husband really enjoyed it.

Cucumber Sandwich

I loved this sandwich. If I were to make some recommendations tho, make sure your bread is thick enough to accomodate all that goes on it. I only used one avacado, I think two would be way too much for one sandwich. The oil and vinegar give it some "zang!". I was thinking you could probably buy a long wheat sub bun and make a huge sub and slice it for company.
