Green Chile and Rice Casserole

Very easy to make. My 9 and 13 year old sons made this dish. I might make it again because it was so easy, but with slight modifications. There is too much sour cream. Some people love sour cream; and that's great, but I don't care for it. I will probably use half the amount of sour cream and mix it with an equal amount of tofu. That will cut the flavor a little bit, but keep the moisture and consistency. Some of my guests said there was too much cheese. It's a heavy dish.

Southwestern Egg Rolls

Huge hit!! I love when I get asked for a recipe at a party. I baked them instead of frying them. I'll probably make this a staple in my home. They can be made and frozen ahead of time, then put directly into the oven for an easy dinner during the week.

Green Bean and Mushroom Medley

It was super easy and delicious. It wasn't OMG delicious, but it is a good "safe" dish to make because basically everybody likes it. I took it to a party and every single person there had some. I think it was the only dish that appealed to everyone. It's not an attention getter, but it's a crowd pleaser.

Nikki's Creamy Crock Pot Potato Soup

I made this recipe almost exactly as written, with two exceptions. 1. I didn't add the bacon. I made this for a Lenten soup supper, which is a holiday where people don't eat meat. 2. I added more potatoes. It was a huge hit. It was one of the two most popular soups at the event. Yes, it was spicy; and that's why people liked it. I think I took a little longer to prep this dish than the 30 minutes suggested. I only used a crock pot. Unlike some of the other reviews, I didn't find a need to use the stove at all. I will definitely be making this soup again. It was a huge success.

Banana Stuffed French Toast

I took this to a potluck and it was a huge hit. I substituted orange marmalade for the orange liqueur. I forgot the confectioners sugar, even though I intended to use some, but it was sweet enough without it. I ran out of batter, so I had to make more. If I make it again, I will add a little cinnamon and the confectioners sugar. If I make it for a potluck, I may use a thinner French baguette. I used a regular French bread loaf and the servings were really big.

Potato Skillet

It's very easy and with tweaking, I was able to make something I liked and will make over and over again. The original was a little under seasoned for me, but since I was making it for my mother who doesn't like seasoning, she thought it was perfect. I like that it is so easy to make that once I showed my kids how to make it, they can make it on their own. I wish I had read the reviews before I made it the first time so I would have known to add green chiles and other things I like because the original is a little bland. It is a good base and any vegetable can be added to it. My youngest son likes to put this in a tortilla. I cooked the bacon separate and let people add it to taste, in order to accommodate my vegetarian daughter. This isn't going to get raves at a camp out, but it's a good choice for a group because you can make the plain egg and potato base and then people add whatever they want. I have to say again. It's so incredibly easy. This will be one of my go-to's for when I have a hard time getting started in the morning.

Oatmeal and Applesauce Pancakes

I made it exactly to the recipe and these were easily the best pancakes I've ever made. Granted, I love oatmeal. I super love oatmeal. I like the suggestions of using buttermilk in place of milk, yogurt in place of sour cream, and cooking on low to medium heat to make sure you don't get raw middles. I'll definitely play around with the recipe a little, just for fun. I served with maple syrup, but will probably make baked cinnamon apples to put on top next time. A little applesauce or yogurt would go well on top, also. I was completely satisfied after two pancakes, even though I'm usually a pretty big eater.

Strawberry Salad with Shallot-Honey Vinaigrette

Lick your plate good. My kids helped me make this; and so we ended up with triple the amount of parsley in place of thyme by mistake. It was still super delicious. This is the salad that I will take to potlucks so I can get compliments. I agree with other reviews that a little cheese would make it extra special. I made it and ate it before reading the reviews and didn't think it was missing anything. Now that I know about the cheese idea, I'll be sure to try it next time.

Crunchy Bok Choy Salad

I used these ingredients, but cooked it differently, so I'm not even sure it counts as the same recipe anymore. I modified it to make it easy enough for my kids to make on their own as an afternoon snack. I put the ramen noodles in a pot of water with the bok choy in a steamer above them, covered the pot, and put that on a burner. Then I put 2 tablespoons sugar and a pinch of salt in a pan, tossed in 1/2 cup of sunflower seeds and 1/2 cup of almonds. I let that caramelize, which took 2-3 minutes. Then I strained the steamed noodles, put both the noodles and bok choy in a bowl, drizzled the olive oil, red wine vinegar, and soy sauce over them, and tossed it all with the sunflower seeds and almonds. My kids have already made this on their own once since the first time we tried it. From start to finish it takes 5-10 minutes.

Awesome Broccoli-Cheese Casserole

I've made this recipe numerous times with numerous variations. I use any canned cream soup on hand: cream of mushroom, cream of celery, cream of asparagus, etc. Then I add whatever vegetable I have on hand: broccoli, zucchini, yellow squash, mushrooms, etc. I top it with any cheese I have on hand. If I don't have mayonnaise, I use ranch dressing.

Caramelized Onion and Horseradish Smashed Potatoes

Seriously delicious. I used apple cider vinegar in place of white wine vinegar, parsley in place of thyme, and sour cream in place of half and half. That's what I had on hand, but in the future, I'll probably make it according to the recipe just to see the difference. I agree with other reviews that the onions could be cut a little smaller. They were a little stringy, but oh so good.

Addictive Pumpkin Muffins

I cut back the sugar without using any substitute. I left out the walnuts because I didn't have any. The trick to soak the raisins in hot water for 10 minutes before mixing them in was wonderful. The raisins were plump and gooey in these muffins. The muffins didn't turn out like cake or a dessert. They have a heartier, more wholesome taste and texture. Very good.

Bruschetta with Shallots

I didn't have fresh tomatoes, so I used (1) 14.5 oz can of diced tomatoes with jalapeno and (1) 10 oz can of diced tomato with green chili. I also didn't have fresh basil so I used about 1/6 cup of dried basil and then added about 1/2 cup of fresh chopped green onion to give it texture and color. I had a fresh shallot and fresh garlic and I think this would not have worked had I not had the fresh shallot and garlic. I toasted sourdough bread in the oven. My entire family devoured this.

Grilled Sausages with Caramelized Onions and Apples

Scrumptious! I used apple cider vinegar. I served with brussels sprouts in a mustard cream sauce, another recipe from this website. Although I previously made the horseradish mashed potatoes from this website, I didn't make them to go with this dish. Next time I will.

Kielbasa with Brussels Sprouts in Mustard Cream Sauce

These were the best Brussels sprouts I've ever made; and we eat Brussels Sprouts on a very regular basis. They are one of our favorite foods. I took the time to make the shallot and garlic in the oven. It was ridiculously fast and easy, so there's no need to skip this step. It made the kitchen smell awesome. I used sour cream instead of heavy cream and butter beans instead of cannellini/white kidney beans. Next time I'll use the white kidney or Northern beans, but this time I used what I had. This was very good with cracked pepper on top.

Hawaiian Banana Bars

I thought the mixture was a little low on banana and a little dry, but I didn't have anymore bananas, so I added a little orange juice. They were very good. I halved the recipe and it made a perfect six bars. Not too sweet.

Sloppy Sams

Scrumptious!! I didn't have the mustard powder and I completely forgot the black pepper. Still, I ate two of them even though I was full after one. I couldn't stop myself. Everybody liked them, even my die hard meat and potato eating dad.
