Focaccia Bread

I made this in my bread machine and it was a breeze. I proofed the yeast with the sugar for 10 minutes first. I did add 1/4 cup of milk powder and it came out so fluffy and delicious. I caramelized sliced purple onion and put it on top with the cheese, but I did this after 10 minutes in the oven so it wouldn´t burn.

Grilled Fish Tacos with Chipotle-Lime Dressing

I usually make the fried version of fish tacos, but was looking for something more healthy and thank goodness I found this recipe. It is a winner!!! The marinade is perfect. I used Mahi Mahi instead and it was a great fish to use on the grill. I didn´t have any seafood seasoning, so I omitted it and it still tasted great. I didn´t use as much adobe sauce as the recipe calls for, but it was perfect for our taste.

Chicken Pot Pie IX

This pie is absolutely delicious, but you must double the sauce otherwise it will be too dry. Once you double the sauce it turns out perfect. Don´t go changing anything else. Leave it alone. I use puff pastry and it turns out fluffy and yummy. Thanks for a great recipe

Mulligatawny Soup I

Delicious! My husband had 3 servings of this soup. My kids love it too. I grated the apple and chopped all vegetables very small. I add the cream to each bowl when serving. I used Basmati rice and I tell you, it gives it such a lovely taste. Thank you for a wonderful soup recipe.

Italian Spaghetti Sauce with Meatballs

FANTASTIC! Everyone loves this recipe. Make sure you use fresh bread crumbs so that the meatballs are soft. I make 24 small meatballs and used chopped tomatoes instead of whole. This was delicious. Thank you

Italian Bread Bowls

So easy using the bread machine to make the dough. I halved the recipe so it would fit in the machine. I proofed the yeast with 1 TBS of sugar first and then added the rest of the ingredients, along with 1 tsp of garlic powder and some dried basil. I did not have cornmeal, so I sprinkled some seasoned salt and onion powder on top. I skipped the first egg wash as it will only make the bread flop by touching it. It is best to just leave them alone. I don´t know why other reviews stated that making 8 bowls made them very small. I thought they were perfectly sized and would not make them any larger. I have made several batches and they look great. Hold soup well and I will be making these again for sure.
