Creamy Baked Pears

Let me start by saying I do not like pears, but when reading this recipe I felt compelled to try it. Am I glad I did! Didn't change a thing other than to sprinkle a bit of cinnamon on top along with the sugar, but just a personal taste preference. Once they came out of the oven, I took one to my hubby and walked back to the kitchen to get mine. All I heard in the other room was "Wow!" Once I took a bite I knew what he meant! 2 weeks later I made these for dinner guests and they loved them as well. Great dessert that is light and elegant.

Chef John's Buttermilk Biscuits

The perfect biscuit recipe! Only change I made was just to use the whole butter stick. The method he uses to work the dough is brilliant. You are not in danger of over working the dough, as that is what makes a dense biscuit, by using the fold and press method. I have made these several times and the taste is wonderful. They bake up light and fluffy. Two important tips that I have learned in making the perfect biscuit. 1) use an up and down motion with your biscuit cutter or glass(whichever you use to cut your biscuits). Using a twisting motion causes the edges to seal and you will not get a good rise. 2) when placing the cut biscuit dough on your baking sheet, place them so they touch one another. This also helps reach a wonderful rise as they bake. I have deemed this the definitive biscuit recipe and my search has ended here. As a matter of fact, I'm making these in the morning since the kids, yet again, have another snow day. And as always... Enjoy!

Quick Chicken Piccata

Oh my! This was SOOO wwonderful! It was easy to throw together but tasted like you spent a lot of time on it. The only change I made was to use chicken broth in place of the wine and water (I never cook with alcohol) and decreased the lemon juice some so it wasn't overpowering. Perfect and company worthy dish! I served over angel hair pasta. Delicious!

Chef John's Pumpkin Pie

Just made this last night and WOW!! My husband who loves pumpkin pie said it was the best he has ever had. Believe the "no cracking" statement because mine came out flawless! The texture of the pie was spot on, smooth and creamy. The only change I did was due to not being able to find the chinese 5 spice. So I just spiced with the normal cinnamon, pumpkin pie spice, and all spice. Topped with homemade whipped cream and we've already eaten half the pie! I would also recommend getting Chef John's pie crust recipe. It is amazing! (I used that for the pumpkin pie). The directions call to mix in a food processor, but I don't have one so I just mix it the old fashion way. Made his crust several times now and turns out perfect every time. That is my go to crust from now on! Happy baking!

Fluffy French Toast

This recipe is THE best for french toast. It makes french toast the way it should be, fluffy, moist (not soggy) and flavorful! I have made this recipe several times and it's my family's favorite. I always use french loaf and can double the recipe to 24 slices. They freeze very well and reheat great. My only change to the recipe is to add a dash of nutmeg. Just a personal taste preference. If you've never used nutmeg just know it is strong so a little goes a long way! You must try this recipe. You will not be disappointed!

Rachel's Cranberry Chicken Salad

I made this for my husband's pot luck at work. I don't even like chicken salad but this one is really good. I liked the fact it didn't have grapes(which I don't like) so that is why I chose it. The combination of the pecans, granny smith apple, and cranberries is fantastic! The only change I made was due to what I had on hand. I didn't have as much mayo as I thought so I did half mayo and half plain greek yogurt. I also used a rotisserie chicken for flavor and easy. Placed the chicken salad on some homemade yeast rolls and YUMMY! My husband said the office was raving!

Fish Tacos

This review is for the overall fish taco. I did not batter my cod so I cannot comment on the batter. I chose to broil mine for a little healthier version. I used grape seed oil, lime juice, cumin, and old bay seasoning and brushed my mixture on both sides, then broiled. Excellent. I made the tacos with the white sauce and cabbage and let me tell you... you will be inventing new ways to use this sauce!!! 5+ stars for the amazing sauce and it pairs so well with the cabbage. Wonderful meal

Ninety Minute Cinnamon Rolls

oh my! These are the best cinnamon rolls! This was the first time I tried cooking with yeast and I don't have a bread maker so I was a little nervous, but they turned out amazing! Have made them twice and plan on making them again this week as my family can't get enough. I baked mine in a 9x13 pan as some other reviews suggested and they baked perfect. I added a delicious cream cheese icing (also from this site) and I think they're better than cinnabon! This recipe is a must try in my opinion and I will never buy canned cinnamon rolls again! Thanks for the wonderful recipe.
