Vegetarian Moussaka

Great recipe. I don't like eggplant so I substituted that with tofu. Get firm tofu, cut it in cubes, and also pat dry. I usually put the cubes on a plate with a paper towel and let the water drain off of it. Also, instead of putting the potatoes and zucchini in a skillet, I bake them (at 375, just like the recipe) for about 20-25 minutes. I add the tofu halfway through to get them browned.

Arrabbiata Sauce

This is a great arriabiata recipe. The only things I would change are: 1/2 cup of finely chopped red onions (1 cup was too much. Put the onion in a food processor to get it finely chopped), 1/2 teaspoon of crushed red pepper (I was surprised but 1 teaspoon was too much, it was very spicy. I don't want hot, I prefer a medium amount of spiciness), Add salt to taste. Forget the parsley...
