Favorite Old Fashioned Gingerbread

Truth be told I have a really hard time following recipes and with baking I know it is essential. Using a few tips from other reviews, a moist and perfectly flavored cake emerged out of the oven. Using an additional 1/2 cup of applesauce and 2tsp each of cinnamon and pumpkin spice was the perfect balance. Now for another confession....the topping was another story. I began with a cup(ish) of heavy whipping cream, added 3 oz cream cheese, 1/4 cup powdered sugar and 1 tsp vanilla. The finished product was a velvety, creamy, lightly sweetened topping. Woohoo! I will now have beautiful and yummy dreams of one fabulous cake. ;-)

Chef John's Chicken and Dumplings

Awesome recipe! I didn't have creme fraiche so I used sour cream plus I subsituted buttermilk for the milk. To add alittle thickness to the soup base one can of cream of chicken soup really did the trick. The biscuits were so light and fluffy but still had great texture and flavor. 'My family loves alittle heat...so I added a jalapeno cut lengthwise during the cooking process and fished it out before adding the dumplings! Most definetly will make this again!

Tangerine Cherry Cranberry Sauce

I made this for Thanksgiving and it was awesome! Loved the dried cherries as it gave it a nice texture. Tangerines are a nice suprise since Oranges are used in so many recipes. I would definetly make this again....I may even add other dried fruit as an addition to the dried cherries!

Praline Sweet Potatoes

This is a great recipe. I usually don't follow recipes but ran across this one and gave it a shot. I tweeked it alittle bit and it came out fantastic. Instead of 4 eggs I used 3. Brown sugar instead of white...not packed. 2 Tbsp Honey. 2 Tbsp melted butter. A pinch or two of cayenne. And for the struesel topping I decided that alittle crumbled bacon would make a nice addition to all the sweetness and the added heat. I'm sure the original recipe is just as good....but try this out for alittle change!
