Transparent Pie

It is exactly what the recipe reflects - super sweet and heavy. It was a very pretty golden brown. I am giving it two stars because I think the result is true to its description. I think I just need a bit more complexity of flavor than sugar and butter.

Cherry-Berry Pie

I decided to try this pie three weeks ago and have now made it three times for different holidays and potlucks. I have brought home an empty pie dish each time. I made it exactly as directed above and it is lovely. The actual size of the canned cherries called for doesn't exist in my area - replacing with more berries works just fine.

I was surprised I enjoy the anise flavor it's perfect with a cup of coffee. My only tip to those who would like to add other ingredients such as nuts, chocolate chips or dried fruits - I would recommend chopping them up as larger pieces get in the way when you are trying to slice the loaves after the first baking. Enjoy!!

Curried Butternut Squash and Pear Soup

I loved this recipe. I roasted everything together (squash, onion, pears, garlic, and fresh ginger) - I then made a roux and added the chicken broth and curry and brought it to a boil and then added the roasted vegetables. Once it came to a boil I used my immersion blender to puree it and added a litle red pepper. I did not add the half and half. It was fantastic.

Garlic Red Potatoes

Zucchini Risotto

This was really great. I chopped the zucchini coarsely and added it at the beginning with the onion, I also included some coarsely chopped red pepper. The vegetables were soft but provided outstanding flavor. I highly recommend this, it wasn't nearly as difficult as I had built it up to be. I am excited to try this again with different blends of vegetables.

Basil Tomato Soup

I hosted Christmas this year and wanted a 'light' lunch to serve and decided this soup would work with a grilled cheese. It was a hit! Everyone asked for the recipe. I did use 1/2 & 1/2 instead of whipping cream and half the butter called for to reduce the fat and added cayenne pepper to kick it up a bit. VERY easy.

Rhubarb Relish

I had never experienced a rhubarb relish before and had no idea as to what to expect. So my initial response is "way too sweet." The tart rhubarb flavor is overwhelmed by the sweetness, all I taste is sugar. I think next time I would start with one cup of sugar and add as needed. Thanks for giving me something new to try.

No Knead Bran Bread

Now I have never made bread with yeast before so there could have been some operator error - but there was definitely not enough dough for 2 loaves. It's a one loaf recipe. I was a little concerned when the recipe said "pour" into pans and I had a big ol' lump of dough - "pouring" was not an option. So don't fret! Just scrape it on in the pan - it tasted just fine.

Pumpkin Black Bean Soup

I enjoyed this recipe - I have to admit half way through it I started thinking to myself that this must be a joke. Pumpkin, black beans and beef broth? Who would have thought? I didn't use the ham and I think that would have helped the overall flavor - I did add some green chiles to the black bean and tomato mixture. I will listen to some of the other reviewers and add some cumin and coriander next time. Thanks for the recipe.

Garden Fresh Tomato Soup

Who knew tomato soup could be so good? I had some very ripe tomatoes that had to be used and this was the perfect solution. If you are using this as a main course it will likely only feed two. I added a chili pepper, bay leaf, and garlic to the simmering blend and used a 1/2 teaspoon of ground chives instead of whole chives. I also blended everything into the soup (sans the bay leaf.) I added the salt but it was a bit too much; I will use less next time and I added a turn of Basalmic vinegar before serving. What a surprising treat this turned out to be.

Boilermaker Tailgate Chili

I agreed to make 5 quarts of chili for a church sponsored Super Bowl chili sale - and this recipe comes out to exactly 5 quarts. I tasted it after I completed the recipe and thought "it's just chili" - I am not a huge chili fan. However, I am giving it a 4 rating because those people who bought my chili were tracking me down to tell me how great it was. So, what do I know? Of course, it could have just been the chip and cheese that were provided with it!

Cranberry Pork Chops II

I always have the same problem with these recipes, my pork is always tough - any suggestions? I don't think it is the recipe's fault it is clearly my execution. It was very tasty - I used orange juice as a sweetner instead of white sugar just because I prefer to avoid white sugar when I can. The sauce was outstanding. I could only find dried cranberries as well and was surprised at how much flavor they produced.

Baked Brie in Puff Pastry

I couldn't decide between almonds and raspberry preserves... so I did one of each. They were both excellent. I would say the egg wash is a requirement versus an option, it nicely seals the phyllo dough and prevents "bursts". It is the cooking trifecta: really easy, tastes great, beautiful presentation.

Peppermint Meringue Cookies

I am surprised how much I enjoy this cookie. It is really delicious. I didn't have any peppermint extract to add and I was concerned that there wouldn't be enough flavor... WRONG! My oven was too hot and they turned a little brown so I will use a lower temp next time. Less a pastry bag fiasco, these were extremely easy to make and tasty!

Christmas Gift Loaf

This loaf comes out beautiful. I did a triple batch and was able to generate 10 mini-loafs, I baked them for about 45 minutes in total. I can't speak to the flavor because I gave them away, but no complaints!

Eileen's Spicy Gingerbread Men

I very much enjoyed this recipe. I let it chill for over an hour. The dough was still pretty sticky and had to use heavy amounts of flour on the rolling pin and surface. I had a 5.5" gingerbread man and I only generated about 16 cookies.

Chocolate Cake II

You can't go wrong when you have a really easy recipe with great results. I followed the recipe exactly and was extremely happy with it - no extra salt was required. I used the "Whipped Cream Cream Cheese Frosting" recipe from this site along with a raspberry filling between layers and on top. Everyone commented on how moist the cake was. I thought I would need less time due to putting it in rounds - but it was in for 32 minutes. This is a great recipe. I am trying to figure out the next time I can make it!

Whipped Cream Cream Cheese Frosting

I used this recipe with the Chocolate Cake II on this site. It was lovely. I made it for a colleague's birthday and it disappeared pretty quickly for an office where each person wants "a really small piece". I used a raspberry filling in between layers - Delicious. I did chill my bowl and beaters and used confectioner's sugar with no consistency issues. I had to force myself to not eat what was left in the bowl after topping the cake.

Ukrainian Red Borscht Soup

This surprised me. I had never used a beet canned or otherwise in my life and thought I would give it a whirl. I really enjoyed this soup. I used too much water and will cut back a bit next time. Just get out your food processor and go to town - this is really easy and has a robust flavor. Thanks.
