I am a huge fan of etheopean food and have eaten this dish in restaurants. For me this recipe was just ok. It was a little blan and not quite on the mark. I even added some etheopean spiced butter to it to make it more rich and flavorful and a dash of berbere mix. I served it with injera home made kifto and we enjoyed the meal, largeley because kifto is usually so spicy it carries most of the flavor. I dont think that I would make this as a stand-alone side though.

Indian Chicken Curry I

I like the sauce this makes, good favors and not too spicy, so I can serve it to the whole family. I have made it twice and it was consistent. I have a hard time making the chicken tender, being large pieces or bite-size ( tried it both ways) it still comes out a bit tough.

Mama's Asian Chicken and Rice

Tried this tonight. Took the advice to dredge the chicken in cornstarch and this thickened the sauce when it all cooked. Chicken came out soft. The sauce was good consistency, I also doubled the sauce ( sans red pepper flakes) and it was the right amount of sauce. My only problem was that it still came out a bit too spicy for my family. Next time I will use half the red pepper flakes and a little less Chinese five spice, I thought it dominated the flavors.

Made this twice. Got rave reviews. I use Khalua instead of rum and beat the egg whites and add to mascarpone mixture for extra lightness.

Slow Cooker Chicken Mole

Tried it last night without altering the recipe (didn't have any raisins though) I think I would make it again but with the following changes: -no breast meat. Too dry, needs to b thigh or drumstick - less peanut butter or maybe peanut sauce instead, I thought it added a tacky mouth feel that added to the dryness -add some salt -add an acidic agent, lime juice or vinegar. Overall the flavors were nice and the heat level was good (with just one adobe pepper)
