Crispy Orange Beef

Excellent flavorful meal but time consuming slicing the beef thinly and drying it. I recommend partially freezing or partially thawing your beef because it makes it easier to slice very thin. I also did not have time to fully dry the beef but I did lay them out on paper towels in a single layer to get some moisture out while I was preparing everything else. I did not have any orange juice concentrate so I used regular orange juice and some extra orange zest. It still turned out very good. All in all I really loved this but will make it on those days when I really really want something different because it does take some time to make plus frying beef probably is not that good for you! LOL

Dijon Crusted Halibut

Delicious! My halibut fillets were on the small side so I shouldn't have used all of the topping. So make sure you don't spread the topping on too thick if you like to taste mostly the halibut otherwise you will be scraping some off. I served mine with Caesar salad, roasted zucchini and twice baked potatoes. Very, very good and I will be making this one again! Edit: I have seen wasabi horseradish at the store and I think that would be a good sub for regular prepared horseradish! Maybe next time.

Clark's Quiche

Quoting Sully because I feel the same way: way too much sour cream and spinach mixture, way too much cheese, and way too many eggs and cream. I only used 1/2 of the egg mixture for 2 deep dish 9" crusts. And more egg mixture poured out while cooking cause there was no room with all the other ingredients. Will never make again.

Blueberry Cream Muffins

I had to make them without vanilla extract because I didn't have any but they turned out delicious!! I also used frozen blueberries. It made a total of 26 large muffins. Cooking time was perfect! You could actually substitute the blueberries for strawberries or any other berry and they would turn out great! I can't wait to try them with the vanilla extract and fresh berries next time!

Chicken Enchiladas II

Needs more spice but was very good. Kids loved it though! I will change it up a bit next time. As a few others suggested using taco seasoning and maybe spicy green enchilada sauce added to the soup mixture.

Shrimp Burritos

I absolutely loved this recipe!! I used the full can of chicken broth and tomatoes since there was only a bit left after measuring. Rice came out great. I used frozen raw shrimp, thawed them and removed the tails, then sauteed them with the fresh garlic. The sauce was perfect!! I'm reheating everything for lunch today... I can't wait!! The only thing that I might add is cilantro but it really doesn't need it.

J.P.'s Big Daddy Biscuits

They turned out FANTASTIC!! I used bread flour because thats all I had. I cut the shortening in with a pastry blender and then added 1/2 cup milk and 1/2 cup buttermilk. I might use all buttermilk next time. I then cut them with a 3" cutter. I ended up with 7 large biscuits. Make sure you use fresh flour and baking powder (not old stuff thats been sitting around for a year!!) It makes a huge difference and will turn out light and fluffy!! Yum.. no more store bought for me.

Famous Chicken Francaise

This is so good!! But I rarely follow recipes exactly and this was no exception. So I sauteed chopped onions, mushrooms, garlic, and asparagus (all fresh) in butter. Added more lemon to eggs and broth. Added more paprika, garlic powder and seasoned pepper to flour. Double dipped the chicken in egg & flour. Pushed veggies to side of pan added more butter and browned the chicken. Added 2 tsp. of cornstarch to broth and added to pan. Served over hot mini penne pasta. The only thing that would have made it better is a little grated parmesan cheese. Thanks!!

Chicken and Dumplings III

Tasted good. Was quick and easy. I used leftover chicken with chicken broth and 1 can cream of chicken with 1 can cream of celery. I also tossed in carrots, celery and canned peas (drained). Only 1 daycare kid wouldn't eat it the rest of the kids loved it. Thanks

Awesome and Easy Creamy Corn Casserole

This was AWESOME!! My mother in law needed a corn recipe to take to my mom's house for Christmas Eve Dinner so she called me and I found this for her to make. It was really, really good. She had everything on hand already and she said it was super easy to make. I will be making this for my family!!

Kosher Salt Encrusted Prime Rib Roast

I should have stuck with Emeril's recipe that I have used before. This was just too salty and trying to scrape off the salt crust did not work. It was a mess and still left the meat too salty around the outer portion. We had to pick around it and eat only the center. The cooking time and temp was way off after 5 hours I had to turn the temp up to cook the rib roast so we could eat. I will not make again.

Texas Hash

I made this for my daycare kids lunch and they loved it!! I thought it was great! Very easy and fast. Changes I made: Used long grain white rice (not instant), half an onion, 2 red mini sweet bell peppers, added 1 clove garlic chopped, 1 can diced tomatoes with mild green chilies, grated cheddar cheese on top. This is a meal that my husband will love so I plan on making it again.

Beefaroni

Adults might think it's missing something, but I made this for kids and they LOVE IT! I used spaghetti sauce and skipped the butter. I think the cheddar cheese is great in this. Next time I might add a can of corn or peas to get the kids to eat their veggies. I will be making this often for my daycare kids.

Slow Cooker Taco Soup

I didn't have time to use the crock pot so I cooked it on the stove. I used canned pinto beans and left out the chili beans and kidney beans. We added shredded cheddar cheese and sour cream to the top. This was very good and dinner was on the table in 30 minutes. My kids liked it too.
