About this Cook
Started cooking about 4 yrs ago, I got very inspired by watching Anne Burrel, Ina Garten was also a great facilitator, and back then Emeril Lagasse had the 1 hr live cooking show -- wow, he was FANTASTIC!!!!
My favorite things to cook
Moroccan Mediterranean Indian Peruvian
My favorite family cooking traditions
Probably Moroccan and related Magreb countries. I love Slow Mediterranean Kitchen by Paula Wolfert, what a wealth of information! Not only does this have recipes, it also has the why's and the how's by experts! I also find Cooks Illustrated to be extremely helpful! And, of course, I LOVE to cook! The possibilities are endless!
My cooking triumphs
Too many to name! Just about everything I've made. Some things I've made well, but did not care for the recipe -- I found out later! Oh well, cook, taste and like/dislike! I manage to use every ingrediet of the recipe, i.e., if I have leftover sauce, I will use it in something else. And of course, I make my own chicken broth -- like no other! It can actually revive the dead!
My cooking tragedies
I once made a bean soup twice b/c I made a mistake the first time, but even following the recipe, it was not good. Once, I made a Dutch baby and left out the baking powder and added the lemon juice, well, it didn't rise. But then I made it again, and followed the recipe -- only to find out I didn't like it. Recently I made some scones and need more heavy cream, but didn't have any more and they came out dry -- so I threw them out. I have blown very few recipes!

Salisbury Steak
Well, I rated this 4* b/c MY recipe came out wonderful! I didn't have ketchup so I substituted a BBQ sauce; I DON'T use prepkgd soups so I added my own sautéed onions and since I knew what the recipe was looking for: flavor, I added anchovies (umami) to the beef. The sauce was definitely not enough, but still was good, I also added a bit of beef broth. I will make it again but w/double some of the ingredients. And still NO pkgd foods, they contain MSG which is not good ladies & gents! Oh, I did add a non MSG bouillon to the gravy and in help it dissolve, heated the water! We CAN all cook, and when we don't have the ingredients called for, we can IMPROVISE!!!
