Ashley's African Peanut Soup

Reviewed: Jan. 16, 2012
I was really excited about making this soup but the flavors kinda mushed together. If it had tasted as good as it smelled it would have been fantastic. I used fresh cut tomatoes instead of canned, and I'm not sure if that contributed to the bland taste, but I did add some sea salt and it only improved the taste slightly. I made the rice separately like others did. My family didn't seem too thrilled with it either. Won't make again but will keep an eye out for a variation that will work. The sweet potatoes were the best part of the soup.

Easy Chicken Casserole

Reviewed: Jan. 28, 2009
This recipe was great with several additions. I cooked 4 chicken breasts in the oven for 40 min (frozen) with olive oil and a sprinkle of salt. With the chicken baking I boiled 16 oz of spiral noodles, rinsed in cool water and set aside. I cooked up a bag of frozen mixed veggies with butter and salt, and added a container of fresh, sliced mushrooms. Once veggies were cooked, I drained and added to spiral pasta. I also mixed 2 cans of cream of chicken soup and 2 16 oz containers of sour cream. I cut up the chicken pieces, then mixed everything together in a large bowl. I poured it in a huge oven friendly fry pan and topped with one sleeve of butter/garlic crackers-crushed with melted butter (approx 1 stick) and baked at 350 for 30 min. The resulting meal was delicious and it lasted for several days-great for taking to work for lunch.

J.P.'s Big Daddy Biscuits

Reviewed: Jul. 10, 2005
I was looking for a really good biscuit and figured I couldn't go wrong with this rating but after following the recipe faithfully they came out flat and dense. They tasted really good but weren't big and fluffy as promised.

The Ultimate Chocolate Chip Cookie

Reviewed: Jul. 4, 2005
Excellent cookie! Better than the recipe on the chocolate chip packaging! The only thing I changed was to add baking powder (part baking soda and part baking powder) as suggested by other reviewers and they turned out great!

Strawberry Oatmeal Breakfast Smoothie

Reviewed: Jan. 8, 2004
This shake is really tasty! I used regular milk instead of soy. I didn't have any bananas on hand so I added a dash of banana extract for taste. I used frozen strawberries with added sugar and the result was excellent! The oatmeal was really filling. I will be making this a breakfast regular!

Black Bean and Salsa Soup

Reviewed: Jan. 5, 2004
This is truly one of the best and easiest recipes I have ever made. The only thing I did differently was what other reviewers have suggested and that is adding one extra can of black beans to the pureed mixture for added texture. I also used less broth, about a cup (chicken instead of veggie broth). I added plain yogurt instead of sour cream to keep this recipe low fat. My husband and daughter loved this and I will be making plenty to freeze and eat for a quicky and yummy meal.
