Saving Money With Allrecipes and Quick Chicken Piccata

I got home late tonight and almost fell into the old habit of picking up take-out on my way home because I was dreading the time, effort and mess of making something at home.
Alas - I love that I created my menu over the weekend and did my grocery shopping for the essentials on Sunday. I remembered I had salad fixings we needed to use up so decided to come home and stick the plan. I'm so glad I did.
Tonight's dinner was Easy Chicken Piccata. I watched the video available which offered two easy tips I will remember including how to dredge chicken (without wasting a lot of flour in a large pan) and how to bring out more flavor from the capers. I used
chicken tenders instead of breasts which made defrosting and cooking quick and easy. I warmed up the leftover rice from last night, steamed fresh carrots and made a salad all within 30 minutes. Dinner was made in one frying pan so the clean up was easy as
Once again, my husband loved it and this was my sixth dinner in a row I have made and we have eaten at home .... sweet home.
Already, I have saved the two year membership fee for Allrecipes by proper planning.
