Cuban Picadillo

My Cuban abuela gave this a 98/100 for accuracy. She suggested I drain the meat better because she didn't like seeing any extra grease in it. I did NOT use cilantro because I've never seen it used in picadillo either. I only had green peppers and the purple raisins, but the recipe was still very good. I did make a softrito, but abuela said not to bother next time and that it would cut down on the grease too. I'm excited about using this picadillo in papas rellenas and empanadas! I served it with black beans and rice. It was wonderful!!!

Bread Pudding

My family loved this! Used no cinnamon or nutmeg, used a cup of whole milk instead of all 2% for the bread, and a large french roll. It was a hit!

Southern Candied Sweet Potatoes

Made this for Thanksgiving a few years ago and it was a hit. This year I was assigned the sweet potatoes again and was able to find the same recipe. Everyone loved them and said they were much better than the store bought kind. I used 7 large sweet potatoes, added some brown sugar in place of all white, and sliced the potatoes into large pieces to prevent breaking. They produced lots of their own liquid and took almost 2hrs on low on the stove top. Still a success in my book!

Bill's Sausage Gravy

Made this in advance for a dinner a couple days later. Substituted the butter for a tablespoon of bacon grease I'd saved. The flavor was great! Everyone loved it!

Glazed Meatloaf I

This was my first attempt at meatloaf. I used a couple packets of Sazon complete seasonings in place of the beef bouillon and took another reviewers suggestion of adding some minced garlic. I'm Cuban so almost everything gets garlic! I also used the full 3 pieces of bread but tore them into tiny pieces. I don't measure things so my amounts may have been slightly different, but it tastes great! Wasn't sure about using mustard powder as I don't like mustard and had never used it as a powder, but the flavor is great and not like mustard you buy for deli sandwiches. I will make this again!

Fried Broccoli

This was very good! I'm not much of a vegetable person, but am trying to do better. I had been dissatisfied with how frozen broccoli turned out after being heated, but this recipe kept it crispier and bright.

Sweet Potato Enchiladas

Not bad, definitely was hesitant to mix onion and sweet potato.. but have been pleasantly surprised. This was a unique dish and fun to try.
