Roasted Apples and Brussels Sprouts
I didn't think this was a good as other roasted Brussels sprouts dishes I've made...I had only a fugi apple, which could have made a difference, as it's not as tart as a granny smith. I did roast for 40 min. and another 5-10 minutes would have been fine, and I think more garlic would have been better.

Chicken Noodle Casserole I
I added some frozen mixed veggies, little Italian spice and 1/2 small onion. Nice recipe, but I think the next time I'll use 1/4 cup sour cream and 1/4 cup milk...I could really taste the sour cream. I did add 1/2 milk as well, with the 1/2 cup sour cream - at first it seemed a little too soupy, but it was fine and will me more moist for re-warming.

Indian Salad
I used jasmine rice and fresh green beans (steamed). I love the red pepper/apple combination....surprised me that it worked well. But it's very bland...I usually skimp on salt, but adding a little more than I normally would and little more pepper was a help but still bland. I added some fresh pineapple and it made it a lot more flavorful...I will probably make this again, because of the healthy ingredients, but noting to add the pineapple and try it with brown rice.
