I love comfort food, I come from a long line of excellent cooks. I have five children and I am very busy so quick and easy is often what I need but I enjoy a full day of cooking when I get the chance!

My family has a few unique recipes such as fried RED tomatoes with a white sauce, we make sweet iced tea that can't be beat and we love a big family dinner!
My cooking tragedies
I don't have a lot of luck with slow cookers. I'm not sure why but not much that I make in my slow cooker seems to turn out to well.

Zucchini Pasta Bake
This is excellent. I made just a minor change. I doubled the recipe because I have a big family and I added a can of cream of celery soup and a can of cream of chicken soup and one can of milk. This gave it a creaminess and prevented any dryness. Other than that I followed everything else in the original recipe. I make this every year with my garden zucchini and tomatoes. My family loves it!

Chicken Pot Pie III
This was AWESOME! Very easy and tastes great! I didn't have cream of potato soup so I used cream of chicken and cream of celery and added a can of diced potatoes. EXCELLENT recipe and super easy!

Chicken Breasts Stuffed with Perfection
This recipe is awesome! I didn't have sun-dried tomatoes so I used a can of petite diced tomatoes and drained the liquid. I loved this filling so much I have used it to make a veggie lasagna and just added a layer of mozzarella. I have also just made the filling and mixed it with angel hair pasta...wonderful!
