Zucchini Raisin Muffins

Very yummy! I omitted the eggs and used ground flax. Doubled the recipe, cut the sugar in half, used applesauce in place of oil and used whole wheat flour. Very moist and kid approved!!

Cauliflower-Cheese Soup

I LOVE this soup! I puree it using my immersion blender just before adding the cheese. Leftovers freeze very well. I add a bit of cayenne pepper to spice it up a bit. SO YUMMY!

Simple Turkey Chili

I LOVE this recipe. It is a bit spicy though as is. The only thing I change is use only about 1 1/2 C water instead of the recommended 2. Very good on a cold day!

Rice with Black Beans

very yummy. I made the following modifications: -Cooked rice separately in rice cooker -Drained and rinsed black beans -Used diced tomatoes (that's what I had) -Used fresh garlic -Added cayenne and chili powder (I think I added a bit too much.. 1/2 teaspoon of each is too much, it was very spicy. i'd try 1/4 teaspoon of each next time)

Lighter Banana Muffins

These were so yummy! I made them in a mini muffin pan and it made just about 4 dozen. I used 4 bananas rather then 3 but other then that kept everything the same. Very good and healthy.

Blonde Brownies I

These came out OK. They were kind of hard and a little dry for my liking. I usually like a softer brownie. Perhaps I overcooked them at 27 minutes for a double batch. And As another reviewer said, they became very hard in the fridge.
