Caramel Filled Chocolate Cookies
YUM is the word that comes to mind... Very nice treat.
Here's what I did, maybe it'll help someone else...
In the recipe i added extra 1/4 cup cocoa, 1/2 tsp salt, used Dove Dark Chocolate with Sea Salt.
The chocolates went into the freezer for a few hours, the batter into the refrigerator for an hour.
When it was time to roll I used a 1 1/2" metal ice cream scooper, then wearing non-powdered non-latex gloves (Sam's Club) pressed out the dough into a nice round circle that the candy fit nicely inside.
Sealed up the cookie, rolled the edges so the cookie looked like a Bon-Bon candy, dipped it in nuts, cooked for 8.5 minutes on air sheets.
Not one exploded!!
