Ciabatta Bread

I followed the recipe exactly and ended up with a pool of gooey paste. I managed to divide it in to somehow and glopped it onto parchment paper. I followed the recipe to a T and did not add extra flour. The "bread" came out like a flat almost cracker type bread. My yeast and all ingredients were very fresh. I may try again and add more flour??

Quick Polynesian Chicken

I topped the chicken first with a teriyaki sauce then baked it with the fruit cocktail. No one in my family liked this - way too bland.

Brie and Mandarin Salad

This was a nice salad. I didn't have champagne so I used extra virgin olive oil, a bit of sugar, 2 tsp of fresh lemon juice along with the other dressing ingredients listed on the recipe. I would probably make this again.

Chicken Thigh Fricassee with Mushrooms and Rosemary

This recipe was not that great. I followed it to a T but it seemed like there was too much runny sauce and although it smelled wonderful my family did not like it - the colour didn't come out that nice.

Italian Chicken with Garlic and Lemon

I made this recipe using boneless chicken breasts and left over baked potatoes. I quartered and fried the potatoes to make them a little crispy using less oil than stated. I followed the recipe but cooked it for about 35 minutes only since I was using boneless chicken and pre-baked potatoes. Next time I would ensure that the potatoes are placed on top as some of them got a little mushy from sitting in the sauce too long. It was a very flavorful recipe with great aroma.

Jambalaya With Shrimp

I modified this recipe by using only 1 cup of rice, added 1/2 c celery and 1/2 red pepper to onions & butter. Then I added cajun seasoning, Lowery's seasoned salt, fresh oregano, fresh basil and a big splash of jalapeno sauce. My family thought it was a great recipe. I'll try it again.
