Easier Chicken Marsala

I made the changes suggested by reviewer #150. Doubled everything but not the chicken, used fresh minced garlic (3 cloves) rather than garlic powder, and added a splash of cream just before serving it along with noodles and a side of fresh broccoli. Oh, I did add 1 t cornstarch to thicken. Hubby agreed that it was a sophisticated and delicious Italian meal. Minimal effort for maximum "wow".

Peanut Butter Balls II

Oh my goodness these are delicious. And they are responsible for me dieting now...because I had a little trouble controlling myself. LOL. I did as another suggested and added some crushed rice crispies. I just 'eye-balled it' on quantity but it was about a cup. I served these at my Christmas party and everyone loved them. NOTE: they are best cold.

Easy Marinated Pork Tenderloin

This was really delicious and, as the name states, easy. I used regular Dijon mustard and added about a tablespoon of honey...since I didn't have honey dijon mustard. Everything else was exactly as the recipe was written. The end result was surprisingly moist and flavorful. Thanks for offering the recipe. Husband and teenaged son enjoyed it too.

Spaghetti with White Clam Sauce

Used this for a cooking lesson with my teenaged son last night. We didn't have basil so I used thyme. Used 1/3 c olive oil and all the can juices. Oh, and I always add extra garlic--3 cloves in this dish. Loved, loved, loved it. Great recipe. I think others have thought the sauce too thin because they didn't allow the sauce to reduce and thicken over heat. Try that next time--simmer 10 to 15 minutes. Yum. And I simply added the clam in the last 3 or 4 minutes of cooking so they wouldn't get rubbery, as suggested. Thanks for this really quick and easy, yet decadent, recipe.

Sausage, Apple, and Cranberry Dressing

Wish I could give it 4.5 stars. Dressing is my favorite traditional Thanksgiving dish. I attempted to make it many years ago and it didn't turn out well. I am so pleased to say that, with this recipe, I can make delicious dressing. Only reason I'm not giving it 5 stars is that I think the seasonings need to be increased.

Dazzlin' Chicken -n- Dumplin's

Grandma's recipe had no detail so I've been searching for one like hers. This is it. (Serves 6.) I used 3 chicken breasts with skin removed. Covered with a combo of water and chicken broth. Added extra liquid so that chicken was submerged 2 inches beneath the surface of the water. I did not adjust the seasonings but did add 1c chopped carrots in addition to the celery. Quite good. On a whim, I added a tiny bit(1T)of the remaining heavy cream and shake of black pepper to each bowl just before serving. Yum. That made it creamier.

Veal Scaloppini with Lemon Cream Sauce

Easiest enough for me to teach my 17 yr-old son who has been cooking for just 6 mths. We loved it. Only modification I made were those suggested by "bsgerry in her review dated May 2011". Like her, I used 2 cloves of garlic and rather than lemon pepper, I used lemon zest from one lemon and 1/2t of black pepper. Next time I may add 1/4t of red pepper flakes..it's a risk but I think it might give it a deeper dimension. Thank you for offering the recipe and the ideas.

Ginger Glazed Mahi Mahi

My teenaged son and I made this as one of his 'cooking lessons' and we really enjoyed it. I followed the directions (w/exception of substituting 1/2t dried ginger) but I didn't panfry it on the cooktop. I followed the cooking directions of reviewer "Hula-Kahlua" (Feb 2009) and baked it in the oven at 400 degrees for 20 minutes while thickening/cooking the marinade in a saucepan on the cooktop. The fish was flavorful and moist without the sauce, but DEFINITELY serve it with this delicious sauce.

Baked BBQ Baby Back Ribs

Holy smokes. I can't believe my teenage son and I made these awesome, fall-off-the-bone ribs. He was LITERALLY speechless. I gave up making ribs years ago because, well, they weren't good. These, however, are amazing. All that basting really pays off once you taste them. My husband couldn't believe we made them ourselves. SCORE!
