About this Cook
Army spouse who loves to travel, but hates to move. I have one son and four furry kids who keep me very busy.
My favorite things to cook
Since I have a son and husband with two very diverse appetites I am kept busy in the kitchen making what they both like. For my husband I like to cook in large batches in order to have lots of left-overs to keep him full. For my son I like to keep it simple as he doesn't appreciate complex meals, lots of soup and sandwiches for him, with chicken and pastas for variety.
My cooking triumphs
I am known for my chicken dishes which go over very well at Army pot-luck functions. I have been sought out at these events just to be told how much my food is appreciated. It certainly inspires me to keep cooking!
My cooking tragedies
Years ago while living in Tennessee I made a wonderful pumpkin and orange cake to take home to Pennsylvania for Thanksgiving only to find out that no one liked pumpkin....as a result I don't spend much time baking!

Island Kielbasa in a Slow Cooker
I use Heinz Chili Sauce instead of ketchup (more savory) and I brown the sausage before putting it into to the crock... then all the cook time in the slow-cooker is used for is to allow the brown sugar, pineapple and sauce to co-mingle with the kielbasa. Always the first to disappear at any potluck event.

Buffalo Chicken Dip
Maybe it's a 'Burgh thing because everyone I know back home makes this and it always goes fast. Today we're watching the Steeler game with our next door neighbors (also from Pittsburgh) and I'll be making this. I've found that leftovers can be spread on sandwich bread the next day

Perfect Pressure Cooker Pot Roast
Very good recipe, I followed the recipe to the letter only substituting Knorr Pfeffer sauce mix for the dry gravy mix. Not owning a pressure I cooked this in the oven @350 and even left in a little longer - it still was very moist. I added baby carrots, red potatoes and mushrooms the onions to round out the meal. I also added two celery stalks to absorb the salt, which must have worked since it didn't seem salty at all! My DH raved about the gravy (which I didn't even have to thicken)and my picky six year old asked for seconds. My kitties even loved it >^..^
