Easy Baked Tilapia

Very easy and tasty. Made gluten-free macaroni and cheese as the side. Got compliments from the family, and I felt very pleased with it myself. I didn't have the lemons or spices called for, so I used Mrs. Dash and Lemon Pepper instead. The frozen veggies already had some Italian seasoning on them, so that added to the flavor as well.

Low-Carb Italian Comfort

The whole family loved this! If you can do some of the prep work early in the day, and buy some of the cheeses already shredded, it's not complicated to prepare, even for a novice. The bonus is it looks like you went all-out, so it would be great for guests.

Low Carbin' Tuesday: Easy Tilapia

Very tasty, and appealed to the family. However this combo is not "easy" for novices. I felt like I was juggling to get everything to come out at the same time, stirring two different sautee pans while prepping and broiling the fish for very brief periods. Next time I may steam the sprouts rather than sautee, so they can be left unattended. Also it felt too rich in my stomach. A stick and a half of butter goes into this menu! LOL. The mushrooms were our least favorite. I think we like them as a sauce enhanced rather than a standalone side dish. Will definitely do the tilapia again!

Personal Portobello Pizza

Be aware that the mushrooms shrink about 40% during baking, so make sure you get enough to fill each person. This is a great low-carb alternative to regular pizzas. My parents and grandmother are in their 70s and 90s respectively, and it was a winner with them. I scraped the gills and baked upside down first to reduce runniness, as advised in other reviews.
