German Apple Cake I

Awesome! Loved BELEWBUBBLE's idea of sprinkling cinnamon sugar in the pan instead of flour -- brilliant! I did replace the oil with 1/2 applesauce, 1/2 oil. Used Red Delicious apples which were perfect for this cake -- soft after baking.

Cabbage Rolls II

The sauce really makes this dish...although I used a 29 oz. can and multiplied the lemon juice, brown sugar and worcestershire sauce by 3-1/2. Also, the cabbage leaves need to be boiled much longer, more like 5 minutes. Mine were too hard to handle when rolling, and were tough when the dish was finished. I baked it at 350 for 1 hour.

Sausage Egg Muffins

DELICIOUS! Although I can't emphasize enough the importance of using LOTS of cooking spray. Spray until it's enough and then spray again. I used half of a medium-large onion, sauteed, then added 6 thinly-sliced pieces of ham, chopped. I spooned this into the cups then added a layer of shredded cheddar. I added milk to the eggs to make it fluffier, and seasoned with Adobo seasoning (salt/pepper/garlic powder. My muffin tins were almost-full! If my kids get ahold of them, they could be gone by tomorrow! Next time I might increase the eggs to 18 and double the onion/ham/cheese, then use two muffin pans, to get 24 "muffins" that are not quite as full.

Slow Cooker Scalloped Potatoes with Ham

Yummy. Doubled the ham and cheese (at least) and no salt. It seemed dry so I added more milk, too much because it was soupy - finished it in the oven, lid off. So, easy on the extra milk and if you put it in the oven, stir frequently to keep it from sticking to the sides/bottom.

Cranberry and Cilantro Quinoa Salad

For everyone who has commented that it is too dry - cook the quinoa in 2 cups of liquid. I'm relatively new to cooking quinoa but every other recipe I've seen, and the directions on the back of the bags, say 2 cups liquid to 1 cup quinoa. Otherwise, I followed the directions, except I didn't have a red onion so I sliced a couple of leeks very thinly and added them when I cooked the quinoa. My family thought it had too much cilantro, although I liked it. You might want to cut back a little if you aren't used to raw cilantro. Next time I'd double the almonds (I like the crunch) and double or triple the cranberries. The latter really give the salad sweetness.

Minted Salmon

This was delicious, although as others noted, it wasn't very mint-y. I didn't have parsley so I only used mint, and I had no idea how much mint makes a "bunch". I cut the lemon juice in half but it still ended up as liquid with the bits of mint and garlic, which were enough to still coat the top of each piece. I marinated the salmon in the fridge for 1.5 hours and it was fine. Forgot about removing it from the marinade so we just baked it in the marinade. It was tender and juicy and flavorful. Next time I'd use even less lemon juice; I think it had enough mint. Omitted the salt and butter as others recommended.
