Meatball Nirvana
I'm giving this 5 stars, because my family loved it. However, even omitting the hot sauce and cutting down on the red pepper, it was too spicy for me. So word of caution to those like me: JUST CUT OUT THE RED PEPPER AND HOT SAUCE. It is flavorful enough without them. ;) I tripled the recipe, because it said the recipe made 12 meatballs. I was like, "Uh, that seems like a small number. I need more than that." Well, I ended up with over 100 3/4-1" meatballs. TIP: Mix this in your Kitchen-Aid mixer! Less messy. Then use a small cookie scoop to scoop them out in uniform balls. After 25 minutes in the oven (we like them well done), I simmered the meatballs in sauce and served over sub rolls. The rest are going in the freezer. :)

Cheese and Bacon Potato Rounds
I really liked these. The only alteration I made was sprinkling salt and fresh pepper on the slices before I put them in the oven. I do think it is important to brush butter on both sides, and turn them as well. Have made these multiple times now, and am loving the recipe. :) Quick and easy way to use up the last few potatoes in a big bag.

Luscious Chicken Pot Pie
I used this basic recipe to create my own version, and am very grateful I stumbled upon it. :) I would say to anyone considering this recipe, there are a few changes you might make depending on your taste. First, SEASON your chicken and vegetable mixture. Without some salt and poultry seasoning, it tastes very bland. I also often add some basil, garlic and fresh pepper. Also, FROZEN vegetables are the norm in my household, I can't stand canned. I use a mixture of peas, carrots and sweet corn. I use ONE can of soup and about a cup of milk. Sometimes I use rotisserie chicken, if I find one at sale at the supermarket. Also, I use frozen pie crusts and it works just as well. It's a very versatile recipe, and you can change it just about any way you want it.
