Quick and Easy Pizza Crust

This is really good! I've never made a punch/rise dough but I don't feel the need to now. I should note that it makes a very thick doughy crust, which I like but some don't. I give a hearty second to the suggestion another reviewer made to mix some italian seasoning with the olive oil before adding it to the mix. All-purpose flour works okay but I really think the bread flour is the way to go. The crust can be a tad dry and the remedy I use is to rub a little olive oil over the crust and, if you're feeling particularly decadent (which I almost always am), sprinkle some parmesan cheese on it too. It adds a fantastic flavorful crisp and makes me glad Boyfriend doesn't like the corners as much!

Black Bean Pasta

I thought this was great! I had neither green pepper nor onion so I just left them out (added onion powder instead). The sauce had a great flavor and I thought there was a sufficient amount; I wonder if those lamenting a lack of sauce used a whole box of pasta instead of the prescribed 8 oz. I added a box of frozen spinach (thawed and drained) just because I had it and was in the mood for spinach. Having added spinach I felt justified in replacing the cheddar with a sprinkling of feta. I think it would have been great exactly as written though! I'm looking forward to having it for lunch today!

Easy Iced Coffee

Thank you thank you THANK YOU!!! I've been wanting to try to make my own iced coffee for months now but never knew where to start. Your recipe gave me the measurements and confidence I needed! I used a packet of splenda instead of the sugar and added some french vanilla coffee mate. Yum!

Speedy Chili Mac

I've got to admit, when I first looked at this recipe I didn't think it looked very appetizing. But, it was late, boyfriend and I were really hungry and I'm really trying to avoid takeout/restaurants. I'm really glad I tried this! Like others have said, it's not gourmet or something you'd make for a dinner party, but it's very quick and very tasty, and the ingredients are usually sitting in the pantry. I used a chicken chili with beans, because that was what I had. I don't think I used a whole cup of cheddar cheese; I didn't really measure. While mixing the chili mixture I added liberal amounts of garlic and onion powder, just because that's what I usually do. I have a feeling this will pop up again soon!

Black Bean Quesadillas

These were fantastic! I think I added some spices to the bean mixture (I think chili powder; I don't remember what else). I cooked them in a skillet with a little cooking spray rather than in the oven (about 8 minutes per side), but I'm sure it would be fine either way. These were great to bring for lunch at work; they reheated very well in the microwave. As suggested I brought some salsa and sour cream to have on the side. Delicious!

Beef Stroganoff II

This is really good! I made a few changes just for personal preference; I think the original recipe is 5 stars on its own. I like to sautee some garlic in the beginning to add some nice flavor and I usually use onion powder instead of chopped onion for the sake of my ultra sensitive eyes. I like to thin the sauce just a bit with some skim milk, just for personal texture preference. It's fantastic with the steak and you can also use ground beef if that's what's in the fridge. Both taste excellent.

Meatloaf With A Bite

This was really good. I've made it a couple of times and used corn bread stuffing mix instead of the saltines one time, another time I used bread crumbs. In both cases it was because I didn't have any saltines and just used what was on hand. The cheese and salsa both add excellent flavor.

Slow-Cooker Chicken Tortilla Soup

This was EXCELLENT. As others suggested, I put raw chicken breast in the slow cooker at the beginning. I made a couple of other small changes: -In place of the whole peeled tomatoes, I used a 15 oz can of tomato sauce because I'm weird and don't like chunks of tomatoes. -I think I used 15 oz of enchilada sauce because that's what size the can was. -I probably used more garlic than called for because I love it. -I used tostitos instead of making my own. Really, though, this was awesome. My skeptical boyfriend loved it and I had coworkers poking their heads into the kitchenette next day asking what smelled so good when I heated it up for lunch.

Quick Chicken a la King

This is a good base, but I imagine it would be quite bland on its own. I didn't have precooked chicken so I boiled two chicken breasts (next time I'd bake or sautee them). Even with the extra step it was very quick and tasted very good. I minced two cloves of garlic and sauteed it with the red pepper. I then added the mushroom soup and milk. I didn't have enough milk (sad, I know), so I added a couple of tablespoons of sour ceam. I sprinkled in some onion powder, chili powder and a bit of cayenne; I also added some parmesan cheese. All that gave it a really nice flavor without being too overwhelming. I didn't feel like rice so I used half a bag of wide egg noodles. During the last couple of minutes of boiling the noodles I added some frozen peas (maybe 1/2 cup). I tossed it all together in the skillet and then served. All in all, the recipe serves as a great base but I think it needs a little help. I have a feeling my boyfriend will be requesting this again soon! I will make it as described above, except for cooking the chicken differently. Thanks!

Black Bean and Artichoke Burritos

I thought this recipe was great. Artichokes and black beans - an unusual combination I never would have tried on my own but it was very tasty so I'm glad I did! I modified a bit - nothing personal, I just almost never follow recipes exactly. I left out the onion and tomato, because I don't like them. I used onion powder instead and liberal amounts of chili powder and paprika, just because I put them in pretty much everything. I also combined it all in one skillet (based on another review) to reduce clean up. I don't know if I was too heavy handed with the filling, but this only made four burritos for me. Maybe it's because I used "fajita" sized tortillas. Great recipe!

Seven Layer Dip I

This was outstanding. I followed some earlier suggestions: I cooked the ground beef with a taco powder and I also mixed the sour cream with the taco powder. I put it into two 8x8 pans. It got me rave reviews at a recent tailgating party!

Spinach Cheese Squares

This recipe brings back fond memories. It does need some tweaks. I make it with a teaspoon of salt (and without the onions), and I usually reduce the amount of cheese; I find the full pound makes them a little too greasy for my tastes! The butter is also too much; you're fine just greasing the pan or using Pam. Anyway, these are highly recommended and will be a hit at any get-together!
