Yellow Squash Casserole

My father had these HUGE Italian squashes that took over his entire garden and kept producing throughout the summer. I explored many different recipes for utilizing them and this one was FANTASTIC!!! Have made it several times now. Very tastey ;)

Authentic German Potato Salad

Absolutely a Great Recipe!!! Have made it multiple times and is always a hit - for bbqs everyone compliments it....when I ask what I can bring mom always says, "how about that German Potato Salad you make" ;) Leftovers taste great...my best friend can eat an entire bowl as a main course for dinner. The only thing I did differently was to leave the skins on the potato - 1)It still tastes great 2)Saves mad time peeling potatoes 3)Adds nice color to the dish. Yayyy!!!

Amazing Crunchy Tofu Salad

Pretty good! I let my tofu marinate a bit longer hoping to get a more intense flavor. Some of the breading did fall off after cooking :(, but it was still good. I put a few extras in my salad to jazz it up, but overall it was a nice vegan salad alternative.

Asian Lettuce Wraps

AWESOME!!! Better than PF Changs and for the price of all the ingredients you get sooo much more portion wise. The only addition I made was adding some chopped water chesnuts - I like the extra crunch and texture it gave. Very tastey & recommend giving it a try :)

Squash and Coconut Milk Stew

I really enjoy this recipe - the first time I made it using yellow squash as an alternative since it was summer and in abundance in my garden. It came out GREAT...so flavorful and was more like a soup. Even my mother who is an amazing cook (dinner parties galore and what not) said, "you made this? It's great...you will have to give me the recipe." Another time I made it I followed the ingredients using the acorn squash and it was thicker and more like a stew. I preferred it with the yellow squash instead...was more flavorful! Also, I added extra coconut milk. Highly recommend!

Baked Seafood Au Gratin

Came out GREAT!!! Made it for a fancy Sunday dinner & had everyone going back in for seconds. Was so rich and flavorful...I highly recommend :) Obviously is a little pricey due to all the seafood used, but well spent. YUM!

Cheesy Corn

Really tasty recipe and I like the crunch of the corn once it's chilled & gets cold! I too use Cajun seasoning instead of Creole b/c it's something I keep on hand in my pantry. Highly recommend...especially in the summer when corn on the cob is in abundance - just cut it off the cob for a nice delicious alternative treat :)

Guinness® Corned Beef

FANTASTIC!!! I've made this recipe several times...absolutely delicious & always a hit with the men :) It makes me wonder why corned beef is only sold during St. Patty's Day - sometimes I buy two and freeze one to make this tasty comfort food now & later! I baked mine in the oven for the required time & it came out perfect!

Ham Salad Spread

I used this recipe when I had some leftover ham from a dinner and was looking to make a ham salad for my lunch during the week. It was indeed very tasty!!! I think what I would have done differently is to have ground 1/2 of the ham and finely chopped the other 1/2 for more of a lunchtime ham salad - I used my food processor & it came out a bit too pureed and mushy for a sandwich. However, I would possibly follow the recipe if I was looking to serve with some crackers or bread for dipping. Obviously you can taylor the ingredients to your liking, which is nice. White Chili

Thought this recipe was very good and a nice alternative to your traditional red chili made with ground beef. I ended up adding some Cajun seasoning because I needed a bit more flavor to the dish and I do enjoy some spice. That was the only change I made to the recipe. Thanks for sharing!

Corn Chili

I thought this recipe was very tasty & a great one for chili! I must admit I ended up adding some ground beef - I had some leftover hamburgers that I wanted to use. I have not tried the vegetarian version, however all the ingredients worked well together and the consistency for chili was spot on. Thanks for sharing!

Quick and Easy Green Chile Chicken Enchilada Casserole

LOVE LOVE LOVE IT!!! First of all, I greatly enjoy Mexican food so I was excited to try this recipe. It was awesome - I baked it in a large glass baking dish and had enough leftovers that I was able to eat over the course of the next few nights. The leftovers were just as delicious as when it came out of the oven. It was easy & awesome. Thank you for sharing I will definitely be making it again :)

Pate and Pistachio-Stuffed Roast Chicken

Great recipe :) I made this dish when having my amazing chef of a mother over for dinner and she asked for the recipe for the number of dinner parties she throws! Instead of using chicken I made it with a Cornish game hen, since it was only a meal for two. I forgot the paprika, but it was still very rich and delicious...looked like something that would be served at a high end restaurant when it came out of the over. Thanks for sharing!

Sausage and Rice Stuffed Peppers

Fabulous recipe!!! I really enjoyed the use of the soup considering I've always used tomato sauce/paste in the past. I used a box of Trader Joe's Roasted Red Pepper and Tomato Soup and it was very tasty. I also used ground beef (just a matter of personal preference), but I'm sure it would be equally as good if made with sausage or even a meatloaf mix trio of beef/veal/pork. I also used a variety of colorful bell peppers - green, red, orange, and yellow. I received compliments from everyone who tried the dish. I will definitely make it again. Thanks for sharing :)

Danish Christmas Red Cabbage

I really enjoyed this recipe...was looking for a way to utilize the red cabbage I had in the fridge from a previous dish and didn't want to waste it. I think the alternative to using red currant jam given by another reviewer sounds tasty, but I followed the directions above and was very pleased with the outcome. I do tend to enjoy vinegar - sometimes on my fries & what not, but you can taylor the amount of sweet & sour based on your personal preferences. Thanks for sharing...it was a nice flavorful, colorful, dinner side dish :)

Thought this recipe was very good. I did use some orange marmalade (couldn't resist) & omitted the orange juice concentrate and ginger simply because I just didn't have any at the time. The results were so tasty I would definitely make it again. Highly recommend! Thank you for sharing :)

Artichoke & Spinach Dip Restaurant Style

This is so delicious I don't know how you couldn't give it 5 stars!!! You get so much as compared to what you receive in restaurants. I baked mine in a large glass baking dish and it was a huge hit! Great for parties, bbqs, etc. I have also tried it with shredded swiss cheese and I think I prefer it that way, although it is still fantastic with mozz cheese as well. Thank you for sharing :)

Mango Salsa

AWESOME!!! So deliciously refreshing...served it over baked cod after spooning some into my mouth it was so tasty ;) I didn't have a jalapeno pepper at the time so instead I added some chopped poblano pepper and sprinkled a small amount of crushed red pepper for some heat. I also added a chopped avocado. Great, thanks for sharing!!!
