Peppers Roasted with Garlic, Basil and Tomatoes

I just made these the other night as a side to baked marinated chicken breasts. In addition to the cherry tomatoes I also threw in some chopped onions & yellow summer squash. I tossed them in oil & vinegar, and added some fresh basil from my garden before placing them in the pepper cups. They were not only easy to make, but a cute colorful little side....oh & I forgot to mention they were tasty!!! Thanks for sharing :)

Spaghetti Squash I

Really unique & healthy alternative to use the spaghetti squash as a substitute for pasta noodles. I would consider making it again, but switching up the ingredients. I also fried up the leftovers into patties as suggested by another reviewer. *Also - most squashes need awhile to cook throughout. I cut in half an place in the oven with a dab of butter @ 375 degrees for about 45-60 min* Hope this helps and thanks for sharing ;)

Avocado Mac and Cheese

I recently tried this recipe & unfortunately I was not a fan. Overall, it was very bland and not so tasty, not to mention if you have leftovers and know what happens to avocados after cut open and not eaten right away. Cola Pot Roast II

Recently tried this recipe & it was great! It was hard to imagine all these ingredients coming together, but boy was it tasty :) I highly recommend giving it a try & I would definitely make this again. Thanks for sharing!

Mango Quesadillas

I made a variation of these one evening for dinner. Decided to throw in a couple cans of shredded chicken breast and after preparing the ingredients in the skillet I baked the quesadillas in the oven for a healthier alternative. They were very tasty and I would definitely make them again. Thanks for sharing

Addictive Sweet Potato Burritos

I decided to give these burritos a whirl & froze some individually for future lunches/meals. I thought they were a nice vegetarian alternative to the traditional burrito, and were overall pretty good....but not so much addictive. I would recommend giving them a try, but would probably not make them again myself. Thanks for sharing.

Caramelized Baked Chicken

I used chicken breast & cooked the sauce on the stove to thicken as recommended. Overall, came out good & I enjoyed the taste. I was browsing recipes for different unique ways to cook chicken breasts when I came across this one. Wish the sauce carmelized a bit more, but overall it was pretty good. May make again in the future. Thanks for sharing ;)

Famous Butter Chicken

Cheesy Butternut Squash Pasta Sauce

Overall I thought this recipe was pretty good. I felt it was a smidge bland so I added some sour cream and crushed red pepper. Just as other reviewers state - the cheese did not consistently met throughout & was a little lumpy. I would make this dish again ;) Thanks for sharing!

Butternut Squash Soup II

This soup was so delicious!!! I added some more veggies in because I had some on hand that I wanted to utilize...turnips, carrots, etc. I also stirred in some sour cream right before serving. It came out great :) Thanks for sharing!!!

Pumpkin Pineapple Chili

I was really excited to try this chili, and while the ingredients were so diverse it had a 5 star rating so I thought it would be awesome. Unfortunately for me, I'm not sure if this combination of things hit the mark. I really did not like the pineapple in this dish...it was a little bizarre & if I made it again I would without a doubt omit it! I like meat in my chili so I added some ground turkey breast. Just as other reviewers said, it does turn out more of a soup than a chili. It definitely was different, and I recommend giving it a try based on all the other positive reviews....I guess it's just a matter of personal taste.

Sausage Balls

I was so excited to try this recipe....I followed this recipe EXACTLY & cooked these wonderful little nugents for 25 minutes as many reviewers recommended to avoid any uncooked sausage in the middle. They came out somewhat overcooked (no I didn't pre-cook the sausage) & a little on the dry side. Also, each ball had a little briwn Frustration that was attached beneath - maybe from the sausage grease while cooking? They needed some sort of sauce so we ended up dunking in ranch. I was pleasantly surprised with the amount it yields....about 50 or so. In the future I think I will cook for a shorter time or @ a lower temperature....hey everyone's oven could vary. Thanks for sharing!""

Stuffed Guinea Squash (Eggplant)

Tried this recipe for the first time last night...it was very good, but also very rich in taste. I served it as a main dish with a salad and between the two of us we were almost able to finish one of the halves. Still have another half left over in the fridge. If I make again I would prob. cut down on the butter and also use a smidge less cheese - I don't think an entire cup needs to be used on top. I also used 1/2 the amount of breadcrumbs and the other 1/2 ritz crackers finely processed. Overall, It was a nice alternative to the abundance of eggplant I get in the summer so I recommend giving it a try. Thanks for sharing!!!
