Habanero Hellfire Chili

Took first prize at a friend's Chili Cookoff with this recipe. Absolutely delicious. I won't EVER bother with any other chili recipe again. . .this is the BEST. Oh, and topping it with cheese and sour cream makes it even more DELICIOUS!!!!

This is as good as it gets, frankly. This is a WONDERFUL pasta dish to have in the weekly rotation. Only made two adjustments: reduced the olive oil to 1/3 cup rather than 1/2 cup (but that's just a personal preference) and to make things easier I simply used two cups of canned Imported Italian Crushed Tomatoes. Oh, and I STRONGLY SUGGEST using a fetucini pasta as it is the perfect size and consistency for absorbing and mopping up this yummy sauce. I would imagine that this would make an excellent dipping sauce with crostini as well as a nice sauce to pour over fish or chicken. Don't hesitate to make this one!!!!

Whole Grain Waffles

These are a breeze to make. Because these are healthy, they keep you fuller for much longer than your average waffle or french toast breakfast, giving you a lasting feeling of satiety. Next time, gonna sprinkle in some chopped walnuts and/or pecans. Yummy!!!

Easy Mexican Rice

I made THREE revisions to this recipe and it worked out quite well: 1) I didn't have taco seasoning mix, so made my own seasoning packet consisting of 1/4 teaspoon garlic powder, 1/4 teaspoon black pepper, 1/2 teaspoon cumin, and 1 teaspoon Kosher salt. I added these seasonings to the boiling water to cook with the rice. 2) I added two tablespoons of tomato paste into the water to cook with the rice (and left the tomato sauce and diced tomatoes out of the recipe). 3) I used black beans instead of kidney beans. The flavor was EXCELLENT. My rice, however, was undercooked after 45 minutes, so I suppose I will have to simmer at a higher heat next time. As someone else has suggested, the rice can also be used as a delicious filling for burritos. I will definitely be making this again, and again! Thank you for sharing.

Italian Sausage Soup

This is really a superb soup, although I did make some changes to suit my own taste. Instead of Italian Sausage, I used Farmer John "Firehouse Hot" Pork Sausage. It's a 12 ounce sausage that imparts a great deal of flavor and spice. (It's also a way to lower the fat content of the soup for those, like me, who are watching their weight.) I added an additional clove of garlic because I like more garlic. Also, I replaced the zuchini and spinach with cabbage. I tore the cabbage up into large bit size pieces. The mild, sweet flavor of the cabbage presented a perfect counterbalance to the zesty heat of the sausage. I couldn't recommend this soup more strongly!!! I will be making it again very soon and anticipate that it will become part of the regular rotation of soups in our home. So, go ahead and make this excellent soup. You won't be disappointed.

Mock Tuna Salad

This was absolutely superb!!! I simmered the chickpeas first in some chicken broth with some salt and pepper, for about 6-7 minutes, and then drained and mashed them. I used a horseradish-based mustard and low-fat mayo and some chopped red onion. I WAS BLOWN AWAY AT HOW GOOD THIS WAS!!! Incidentally, I felt like I was eating something more akin to egg salad or potato salad than tuna salad but who cares right? YOU MUST GIVE THIS A TRY!!!
