Chicken Tortilla Soup V

Husband liked this...used medium salsa....not too spicy. Substituted 12.5 oz canned chicken, one 11 oz. can Mexicorn, 1/2 cup onion then added 1/2 can low sodium black beans, 3 oz. tomato paste to thicken and add a little more flavor. Followed measurements in rest of recipe. Simple and fast. It's a keeper for us.

Grilled Rosemary Pork Chops

Very easy and pretty tasty. I'm not much of a cook and tend to over cook pork on the grill, however this turned out just right...I followed the recipe exactly. Husband said it was OK.....he prefers his pork chops extra dry and crispy. These were moist and flavorful....a keeper.

Easter Breakfast Casserole (no carb and immediate bake) VERY GOOD!

Liked that it was free of bread and didn't have to sit overnite. Put it together and bake immediately. I changed to 10 eggs about 1/2 to 3/4 lb bacon and 1.5 cups of milk. Also browned hashbrowns in the pan before adding other ingrediants. Would easily feed 8 people. 9 X 11 pan.

Easy Baked Tilapia

Tom really liked, not fishy, I also made one with italian seasonings and garlic powder...he liked the other better....both were good. He likes it pretty done. Asparagus was thick and done perfectly.

Penne Pasta with Spinach and Bacon

Sautéed chopped onion with bacon (6 to 8 slices chopped) and garlic. Used canned diced tomatoes with italian seasoning. Added several handfuls of fresh spinach directly to tomato mixture to taste. Added red wine to keep sauce from getting too thick and to taste. .... could use water or red cooking wine. Added salt and pepper to taste.

Colleen's Slow Cooker Jambalaya

A keeper! Followed the reccipe for the most part except did add shrimp and used half the pepper., and husband thought it was still a little too warm. We thought it had very good flavor. It was brothy as mentioned by a few other reviews, however we added a scoop of cooked rice and a a dollup of sour cream to our bowls and used some crusty bread to soak up the juices....a keeper.
