Vegetarian Meatloaf with Vegetables

My husband asks me to cook this for dinner again and again. I use Oroweat's Oat-Nut bread, and I substitute rosemary for sage. Also, I toss the potatoes and carrots in some extra rosemary before tossing them in the pan. Sooo yummy!

Cheddar Tomato Dumplings

I really messed with this recipe, but it came out very flavorful! First, I added a whole diced onion and green pepper instead of just the few tablespoons the recipe called for. I also added one stalk of diced celery, since I had to buy one for the leaves. Finally, I also added garlic and one, small, grated zucchini in with the veggies because I had a leftover one in the fridge. When I added the flour, I also added some celery salt. When I made the dumplings, I added garlic powder. Dinner was so delicious! The only complaint I have is that it seems to need another can of tomatoes. The only liquid is a 28-ounce can, and that's less than 5 ounces a serving! There's a little bit of liquid for a lot of dumplings. So, I think I'll double the tomatoes next time, too.

Pecan Cups

I used a mini cupcake pan, and I greased & floured it well so I didn't have to use cupcake liners. I ended up with 24 mini cupcakes, and they baked for 23 minutes. Like everyone suggested, I doubled the filling. I had a lot left over. These are so good, though. The crust is flakey and buttery, the filling is crunchy and sweet... my husband raved about them and ate six immediately!

Pumpkin Waffles with Apple Cider Syrup

Great recipe! I opted not to make the syrup because I love the flavors of pumpkin and maple together. I did, however, sautee some apples in cinnamon to put on top. This made a LOT of waffles. Our waffle iron makes big waffles (we can only eat one each), and we got 6 large waffles from it. We're going to freeze the leftovers.

All-Day Apple Butter

This apple butter is out of this world! I chose this recipe instead of another because I didn't have to buy expensive cider or juice for it. I used half granny smith apples, and, for the other half, I used a mix of golden delicious, fuji, honeycrisp, pink ladies, and gala. I cut the sugar down to two cups, and I'm glad I did. It's the perfect sweetest and would have been WAY too sweet with four cups. Also, I took another reviewers suggestion and used an immersion blender at the end of the cooking cycle. It made the butter smooth & creamy.

Best Lemonade Ever

Very simple and easy, and it tastes so fresh and delicious. I had three large lemons left over from another recipe, so I was able to make a half batch of this lemonade. I have a feeling my husband and I will be drinking it all! I added some leftover fresh mint to the pitcher as garnish. Looks and tastes great. I'll definitely make this again, although I might reduce the sugar next time so it's a little less sweet.

Individual Chik'n Pot Pies with Puff Pastry

This pot pie makes me want to go back to every other good recipe I've ever reviewed and make them all 4s! This one stands out; it was so flavorful and delicious! I made a couple of additions: garlic and celery salt. I also had to add more vegetable broth because most of mine seemed to boil away, but that could have been because we're at high altitude. Next time, I'll skip the pepper, but other than that, it was perfect!

Portabella Basil Sub

I loved how fragrant this dinner was. I made a few changes to the recipe; I didn't buy enough shallots, so I added some onion. Also, I used green Tabasco sauce instead of the Jamaican pepper sauce and used white vinegar instead of balsamic (because that's all I had). My husband and I both loved the subs!

Chewy Granola Bars

These taste incredible; I'll never eat the store bought ones again. Also, the aroma is out of this world. My house smells like a mixture of roasted nuts and cookies. I increased the butter from 2/3 cup to 1 cup and also added a pinch of salt, and my granola bars kept their bar shape and didn't crumble. Instead of all chocolate, I did 1 cup mini-chocolate chips, 3/4 cup dried cherries, and 1/4 cup sliced almonds. These are fabulous.

I make this recipe regularly, at least a few times a month. It's so easy, flavorful, and it's a good way to get my toddler son to eat his vegetables (yes, even he likes this dish!). I do a few changes. First, I increase the garlic to about four cloves. I mince the garlic and don't discard it. We love garlic! Second, I use at least three cups of vegetable broth. When the dish is almost done, I remove the lid and let the broth reduce for a few minutes until it starts to thicken and is more sauce-like. It adds creaminess and more flavor. Finally, I double the cheese. The cheese is the best part!

Jen's Heavenly Egg Salad

I made this for dinner to utilize our leftovers, so I had to change a few things to avoid a shopping trip. First, I used lime instead of lemon. I also used celery instead of green onions and Miracle Whip instead of mayonnaise. It was delicious! My husband said he could eat it for dinner every night for a year ;-)

Fruit Pizza II

My husband made this for the family on Thanksgiving. It turned out beautifully! He used mandarin oranges, strawberries, blueberries, blackberries and raspberries for the fruit, but he used this recipe for the glaze and the cream cheese/whipped topping.

Perfect Pumpkin Pie

Devine! I made the crust from scratch and blind baked it so it would be flakey. Other than that, the only change I made to the recipe was doubling the cinnamon. The pumpkin pie was easy to make and came out absolutely perfect. It was truly the best pumpkin pie I've ever had!

Autumn Cheesecake

So easy and delicious! This was the first cheesecake I ever made, and it came out perfectly. I wasn't sure if I was supposed to use roasted pecans or raw pecans. I opted for the roasted pecans, and they worked perfectly. So, so yummy! My husband really loves it, too, and is already asking me to make it again for him and his pals next week. I didn't make any changes to the recipe whatsoever, and I definitely did not have to bake it in a water bath. It turned out absolutely perfect as is.

Coconut Curry Tofu

I love (love, love, love) this recipe. I make it for dinner every month or so, and it makes delicious leftovers for lunch the next day! I've never used fresh ginger in the coconut curry tofu. I use about 1/2 a tsp of ground ginger instead of the 1 tsp of fresh ginger. It works just fine!
