Spinach Mushroom Quiche

I find this quiche to be too rich for my taste (and I don't like the crescent crust), but my husband loves it and asks me to make it frequently. My grocery store doesn't have an herb and lemon soup mix, so I've added rosemary, garlic powder, and lemon herb seasoning to mine. I give it 3 stars since he loves it so much... and I don't.

Pan-fried Polenta with Corn, Kale and Goat Cheese

I made only one change to the recipe, and that's that I substituted mozarella for goat cheese (I don't like goat cheese). I loved the texture and flavor mix of this dish, but it still tasted a little bland. I'm going to make it again and add some green hot sauce to it. I think it'll be even better then!

Fudge

Loved how easy this fudge was to make! It tasted pretty good--not too sweet--and wasn't grainy at all since it didn't call for granulated sugar. I cooked it on the stovetop instead of the microwave.

Mom's Zucchini Bread

This was my first time making zucchini bread, and I think it's very moist and good. First, I decreased to the sugar to two cups from 2 1/4 cups. Then, I added extra cinnamon and decreased the nuts by half. Also, I diced up the nuts really small so my 9 month old could have some of the bread without me worrying about him choking. He loved it!

Tater Tot Casserole II

The sour cream mixture just sits on top of the tater tots. It never melts down or incorporates. Also, it's very heavy and just.... not very good at all.

Best Lemonade Ever

Very simple and easy, and it tastes so fresh and delicious. I had three large lemons left over from another recipe, so I was able to make a half batch of this lemonade. I have a feeling my husband and I will be drinking it all! I added some leftover fresh mint to the pitcher as garnish. Looks and tastes great. I'll definitely make this again, although I might reduce the sugar next time so it's a little less sweet.

Portabella Basil Sub

I loved how fragrant this dinner was. I made a few changes to the recipe; I didn't buy enough shallots, so I added some onion. Also, I used green Tabasco sauce instead of the Jamaican pepper sauce and used white vinegar instead of balsamic (because that's all I had). My husband and I both loved the subs!

Carrot Cake III

This is my first time making carrot cake. I made them into cupcakes, and it turned out really well! If you do cupcakes, be sure to check on them at 20 minutes because mine were done around then. I used most of the suggestions from other reviews (I increased the cinnamon, subbed some brown sugar for white, added nutmeg, subbed some applesauce for the oil, and used crushed pineapple), and it came out fantastic. However, next time, I'm going to skip the pineapple, as I thought it was gross getting little bits of pineapple in my cake.

Guacamole

Loved the guacamole! I pureed the avocados & lime juice until smooth and then added in the remaining ingredients. After taste-testing it, I added in more onion and cilantro. Yum!

Apple Dumplings I

I liked this recipe better than another apple dumpling recipe I'd tried. However, the sauce was too rich. Maybe I'll cut down on the butter next time. I cut down the sugar to 3/4 cup and I doubled the cinnamon, and I'm glad I did! Also, the crust was terrific, but the apples inside were still hard. I think next time, I'll poke them with a fork and see if they get more tender that way.

Creamy Corn Chowder

This chowder was so creamy and delicious... perfect for a snowy spring day in Colorado! I'm definitely making this again, though I think I'll only use half the pepper flakes next time as it was pretty spicy!

Chewy Granola Bars

These taste incredible; I'll never eat the store bought ones again. Also, the aroma is out of this world. My house smells like a mixture of roasted nuts and cookies. I increased the butter from 2/3 cup to 1 cup and also added a pinch of salt, and my granola bars kept their bar shape and didn't crumble. Instead of all chocolate, I did 1 cup mini-chocolate chips, 3/4 cup dried cherries, and 1/4 cup sliced almonds. These are fabulous.

Lemon Curd Tassies

I had fun making these with my sister and husband. They were surprisingly easy and soooo tasty. We doubled the lemon zest to 1 tsp, but otherwise, we followed the recipe exactly. Our filling thickened without any problems after we increased the stove heat from "2" to "4." However, we didn't have enough shell, so we re-rolled all the dough to be paper thin and still ended up with 17 tassies instead of 24. As a result, we had lots of extra filling! We put the rest into a small pie crust. This recipe still gets 5 stars because it was so yummy!

Penne Primavera

I make this recipe regularly, at least a few times a month. It's so easy, flavorful, and it's a good way to get my toddler son to eat his vegetables (yes, even he likes this dish!). I do a few changes. First, I increase the garlic to about four cloves. I mince the garlic and don't discard it. We love garlic! Second, I use at least three cups of vegetable broth. When the dish is almost done, I remove the lid and let the broth reduce for a few minutes until it starts to thicken and is more sauce-like. It adds creaminess and more flavor. Finally, I double the cheese. The cheese is the best part!

Jen's Heavenly Egg Salad

I made this for dinner to utilize our leftovers, so I had to change a few things to avoid a shopping trip. First, I used lime instead of lemon. I also used celery instead of green onions and Miracle Whip instead of mayonnaise. It was delicious! My husband said he could eat it for dinner every night for a year ;-)
