Chicken Tikka Masala
I have had some amazing Indian food over the years and am very picky in this regard, so I wouldn't say this close to the restaurant taste as written, but is an excellent starting point...if you want a more authentic flavor try cutting the cumin in half and adding fenugreek, which comes as either whole seeds or leaves at some Indian grocers, but I think the best thing if you can get a hold of the seeds is grind them to a powder using a mortar and pestle or blender and add 1/2 tsp. at a time to your taste. The fenugreek is a must in the CTM at the best Indian restaurants, you will know as soon as you get a whiff of it. one other thing, when I make this at home I often take a pita bread, smear with butter and sprinkle on some garlic and cilantro, and just put under the broiler for a few mins 'til butter melts and pita is a little crispy (my version of the garlic nan)...these things being said thank you much Yakuta this is a great base recipe that you can take and run with to make your CTM dreams come true :)

Italian Dressing Mix
I just made this tonight, and can't believe how similar it is to the store bought italian dressing packets (I usually go for good seasons myself). I used garlic powder, onion powder and celery seed instead of the salts. I gave it 4 stars instead of 5, because I think it might need a little tweaking, the taste is spot on, but there are a lot of dried flaky herbs in this recipe, so it ends up being a really leafy salad dressing, I am going to try and eliminate the parsley (because IMHO it doesn't have much flavor) and maybe reduce the oregano to 1 T and see if that is any better, also the celery seed is a bit iffy to me, I might try and leave that out next time as well. Thanks so much for this recipe, it is awesome!

Creamy Au Gratin Potatoes
This was absolutely delicious! I made as written and it turned out perfectly, I chose this recipe because it skips parboiling the potatoes, which was so much simpler to me! I have previously made a cheesy potato casserole (the one with canned cream of chicken soup and sour cream etc.) when I'm craving something potato au-gratin-y, but this will be my new go to recipe, it uses simple ingredients that are not processed, and was absolutely delicious! Not light on the calories though, but moderation in everything - my motto "there are no poisons in life, only poisonous dosage", so don't eat the whole panful, but enjoy and indulge!
